Fresh vs. Frozen Peaches: Which to Choose?

One of the best parts of this peach sorbet is how flexible it is. You can use either fresh or frozen peaches, depending on what’s available or what’s more convenient for you. Fresh peaches, of course, are in season during the summer and have a wonderfully fragrant aroma. But frozen peaches are a great year-round option if fresh peaches aren’t in season or if you’re looking for a quicker fix. Frozen peaches also blend up smoother since they’re pre-frozen, making it a little easier to get the right texture for your sorbet. Both options will give you a delicious, refreshing treat, so choose what works best for you!
How to Peel Fresh Peaches Easily

If you decide to go with fresh peaches, here’s a little trick: refrigerate the peaches before peeling them. Refrigerating them first makes peeling the skin off much easier. When peaches are chilled, their skin loosens, so you can simply make a small “X” cut at the bottom and dip them in hot water for a few seconds. The skins will peel right off without a struggle. Trust me, once you’ve tried this method, you’ll never go back to wrestling with peach skins!

For my peach sorbet, I used white peaches, and let me tell you, the color of the sorbet is absolutely gorgeous. The flesh of white peaches is a little more delicate than yellow peaches, and they give the sorbet the most beautiful shade of pink. If you’ve been following me for a while, you probably know how much I adore all things pink! The soft blush color of this sorbet makes it not only a treat for your taste buds but also a visually stunning dessert that’s perfect for any summer occasion.
Low-Sugar Lifestyle? No Problem!

If you’re following a low-sugar lifestyle, don’t worry! You can easily make this peach sorbet by swapping the sugar for a sugar substitute like monk fruit sweetener, NutraSweet, or other sugar alternatives. These substitutes work well because they mimic the sweetness of sugar without the added calories or impact on blood sugar levels.
Here’s a quick guide to sugar substitutes in your peach sorbet:
- Monk fruit sweetener: This natural, low-carb sweetener is a great option for those looking to reduce sugar intake. Use the same amount as you would regular sugar.
- Stevia: If using stevia, use about 1/2 the amount of sugar called for since it’s sweeter than regular sugar.
- Erythritol: A great option for those looking for a sugar alcohol substitute. Use it in a 1:1 ratio with regular sugar.
- Xylitol: Another sugar alcohol that can be used in place of sugar at a 1:1 ratio. Just be aware that it’s not safe for pets, so keep it away from your furry friends!
With these swaps, you can enjoy the delicious flavors of peach sorbet while still maintaining your low-sugar goals. So simple, right?
The Recipe: Sweet, Simple & Delicious

Now, let’s get to the recipe! As I mentioned, you only need three ingredients for this sorbet: fresh or frozen peaches, sugar (or a sugar substitute), and lemon juice. You’ll blend everything together, freeze it, and voilà! You’ve got a refreshing, fruity sorbet that’s perfect for hot summer days.
Ingredients:
- 2 pounds fresh or frozen peaches
- 1 cup sugar (or your preferred sugar substitute)
- 1/4 cup lemon juice
Directions:
- If you’re using fresh peaches, start by peeling them (I refrigerate mine first to make this easier). Once peeled, slice them into chunks.
- Add the peaches, sugar (or sweetener of choice), and lemon juice to a blender or food processor. Blend until you reach your desired consistency. If you want it extra smooth, blend a little longer!
- Pour the mixture into a loaf pan. If you’d like, you can add some sliced peaches in the middle for extra texture and flavor.
- Cover with plastic wrap and place in the freezer. Let it freeze for at least 4 hours, or overnight for a firmer consistency. After 4 hours, it will be a bit frozen, and if you freeze it overnight, it will be rock solid. You may need to let it sit out for about 10 minutes before scooping.
- Serve it up and enjoy! I love adding a frozen peach slice to each serving for an extra peachy touch. It’s SO good!
