I love the texture of the bread, soaked in savory flavors. I don’t make it often because it seems like such a decadent holiday dish and it takes so long to prepare. But it doesn’t have to be a special occasion side dish!

What Makes this Stuffing “SKINNY”
I added a lower-fat turkey sausage to this recipe that is much less caloric than traditional sausage. Another thing I did with this recipe is added cranberries for flavor. Cranberries are very low calorie and a great way to add flavor to the dish without added fat. The flavor combination of the sausage and cranberries is so good! I also love the way the cranberries puff up when cooked and burst in your mouth in this dish.
Cut Calories but Not Flavor
Another way I cut down on calories is by taking out the butter in this dish. Traditional stuffing has a lot of oil or butter. Because I made this in the Instant Pot I was able to cut out the butter and I replaced it with low-sodium chicken broth for flavor and moisture.
Add Flavor with Fresh Herbs
I also added a lot of flavor to the stuffing with fresh herbs from my garden. At the end of the season I cut all of my herbs and I put them in jars on my windowsill to keep them alive longer. You can also pot fresh herbs inside in the winter. I love the taste of fresh herbs. I added fresh oregano and fresh rosemary to the stuffing and it’s so good!
Use the Saute Feature to Cook the Sausage, Onion and Celery
I start off the recipe by using the saute feature on my Instant Pot to cook the sausage and onion until it’s cooked through. Then I cancel the saute feature and add the rest of the ingredients and lock the lid in place under pressure. In just a few minutes the stuffing is cooked and ready to eat.
Why Cook Stuffing in the Instant Pot?
So simple. No cooking over the stove for hours or worrying that it will get dried out in the oven. The Instant Pot locks in the pressure which keeps the moisture inside and the stuffing is so moist!
I use regular stuffing bread mix for the bread and this is the moistest I have ever seen stuffing using dried bread.

Make Skinny Cranberry and Sausage Stuffing in the Instant Pot. Tart cranberries and savory turkey sausage combine to create a delicious lighter stuffing. You can make it in your instant pot in under an hour.
Ingredients
- 1.5 pounds ground turkey sausage
- 2 cups chicken broth
- 2 t. poultry seasoning
- 1 t. black pepper
- 1 t. salt
- 2 cups celery, chopped
- 1 cup onion, chopped
- 1.5 cups cranberries
- 1 package stuffing mix (12-14 ounces)
- 1.5 cups water
- 1/3 cup fresh herbs (I used oregano and rosemary but you can also use parsley)
Instructions

Put Instant Pot to Saute setting and cook sausage and onion for 5 minutes, then add celery. Cook until turkey sausage is cooked through. Turn saute feature off.

Add stuffing, herbs, cranberries, water and chicken stock. Stir well.

Put lid on pot and turn pressure dial to "pressure". Set heat to Pressure Cook for 10 minutes.

Let stuffing naturally release and serve! Garnish with fresh herbs.
