Make Your Own Pasta

Over the past few weeks, as we have been under stay-at-home orders, I have had a hard time finding pasta at our store. Many of the basic items have been out of stock. My mom made homemade pasta as we were growing up and I decided to make some pasta like she used to make from my childhood! It’s not hard!

The easiest homemade pasta recipe with no machine! You only need a few simple ingredients to make your own pasta. Create spaghetti, fettuccine or even ravioli with this easy recipe and no machine is needed!

What Ingredients do you Need to Make Homemade Pasta?

You only need a few basic ingredients to make homemade pasta. Flour, eggs, water, salt, olive oil or vegetable oil. You can make pasta without using oil but I find that oil gives dough more elasticity and makes it easier to roll out.

Use Pasta Right Away or Store Appropriately

Lay floured homemade noodles on a clean kitchen towel until used.

Homemade pasta can be made an hour or two ahead of cooking. If you need to store it longer than an hour or two you can put pasta in a zip lock or cover with plastic wrap and put it in the refrigerator until you want to cook it.

Refrigerate Noodles for Up to Three Days

You can also make noodles in advance and store it in the refrigerator. Simply put them in a big ziplock or wrap them in plastic wrap and store them in the refrigerator for up to three days. Then take them out and boil them as you would when they are fresh.

Freeze Homemade Noodles

The easiest homemade pasta recipe with no machine! You only need a few simple ingredients to make your own pasta. Create spaghetti, fettuccine or even ravioli with this easy recipe and no machine is needed!

Homemade noodles can also be frozen. Simply store them in a plastic ziplock or other airtight container and keep them in the fridge for up to two months. Take the noodles out the night before, put them in the refrigerator and let them thaw overnight.

Dry Homemade Noodles

Another way to store homemade noodles is to dry them. Simply hang them drying racks, hangers or a dowel for around 24 to 48 hours, or until dried. Once dried, dry pasta can be store in a ziplock or airtight container in the pantry for up to a year.

This basic recipe can be used to create a few different types of pasta. By cutting the pasta thinner it can be used as spaghetti noodles. Cut the pasta into thicker strips and it makes wonderful fettuccine noodles. You can also roll it out into very thin sheets and cut out shapes for filled pastas like ravioli or tortellini.

Ingredients

  • 2 eggs, beaten
  • 2 cups all-purpose flour
  • 1 cup flour (for rolling out dough and separating noodles)
  • 1/4 teaspoon salt
  • 4 Tablespoons water
  • 3 Tablespoons olive oil or vegetable oil

Instructions

  1. In a medium bowl, add 2 cups of flour and create a divet in the middle.

  2. add beaten eggs to the divet in the middle of the flour. Use a fork to mix the eggs into the flour.

  3. Add salt and water. Mix well.

  4. Add 1 tablespoon of oil at a time and mix until the ball holds together . If it seems too sticky, add a little of the remaining flour.

  5. Once the ball holds together, put it on a lightly floured surface and knead.

  6. Roll the ball into a rectangular shape until it is about 1/4 inch thin. Use a pizza cutter or knife to cut pasta into desired shape and width.

  7. Put remaining flour in a bowl and add strips to the bow, coating each noodle so they don't stick together.

  8. Lay floured noodles on a clean kitchen towel. Use pasta right away or put the pasta in an air-tight container or zip lock bag and refrigerate. Pasta can be refrigerated for up to three days or frozen for up to 2 months.

    **You can also lay pasta over a hanger and dry it for 2 days, then store it in an air-tight container in your pantry.

    Lay floured homemade noodles on a clean kitchen towel until used.
  9. When boiling, add homemade pasta to boiling water and cook for 3 minutes. Check pasta after this time to see that it is cooked thoroughly and serve.
