- Salad:
- 1 pound chicken breast, cooked, seasoned, and cut into strips
- 1 head Romaine lettuce, chopped
- 2 red bell peppers, diced
- 2 yellow bell peppers, diced

- 2 cups cabbage, shredded
- 1 package cold rice noodles (8 ounces) {you can cook them or soak them in hot water. I prefer soaking them for a better texture}.
- 1 cup green onions, diced
- 1/4 cup chives, diced
- 1/2 cup sliced almonds
- 1/2 cup, cilantro chopped
- 1/2 cup, chives diced
- Dressing:
- 1 cup creamy peanut butter3 tablespoons rice vinegar3 tablespoons soy sauce2 tablespoons honey3 tablespoons lime juice1 tablespoon fresh ginger (or 1 teaspoon ginger powder)2 teaspoons sesame oil2 cloves garlic, minced1/4 teaspoon red pepper flakesSalt and black pepper to taste
Directions:
- Prepare the Salad:
- In a large bowl, combine the chopped Romaine lettuce, diced bell peppers, shredded cabbage, cooked rice noodles, diced green onions, and chives.
- Add the cooked chicken strips to the bowl.
- Make the Dressing:
- In a medium bowl, whisk together the creamy peanut butter, rice vinegar, soy sauce, honey, lime juice, fresh ginger, sesame oil, minced garlic, red pepper flakes, salt, and black pepper until smooth and well combined.
- Combine and Serve:
- Drizzle the dressing over the salad ingredients in the large bowl.

- 2 teaspoons sesame oil olive oil can be substituted
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
