Creamy Lemon Chicken Orzo Soup with a Kick!

It's the perfect soup to celebrate the transition of summer going into fall with fresh lemon, Anaheim peppers, garlic, fresh  herbs and the satisfying taste of orzo to give it a hearty base.

I love Fall. One of the reasons I love it is that it’s time to make soup again!! I swear — I could eat soup every day, all year long. I love it! And because I get bored easily, I am always looking for a new “favorite” soup. Another thing I love is orzo. There is something about the smooth texture, the small size that enamors me. If you have been reading my blog you will know that I have made almost ANY type of orzo salad you can image – Orzo Vegetable Salad (we make this one at LEAST once a week), Orzo Mediterranean Salad, I have even made an Italian Wedding Soup with Orzo. And lemon and orzo are an amazing combination. So the other day I thought – I haven’t made anything with orzo in a while and I had a couple of chicken breasts and some new lemon-pepper, so I tried a new soup!

Creamy Lemon Chicken Orzo Soup with a Kick is an easy soup to make with a light, satisfying flavor. The peppers in the soup add just a tiny bit of kick to the taste. It’s the perfect soup to celebrate the transition of summer going into fall with fresh lemon, Anaheim peppers, garlic, fresh herbs and the satisfying taste of orzo to give it a hearty base.
Ingredients
  • 1 Tbs. oil
  • 1 onion, chopped
  • 1 Anaheim pepper, diced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 cloves of garlic, chopped
  • 6 cups of chicken broth
  • 2 chicken breasts, diced or shredded
  • 1.5 cups of orzo
  • 1 Tbs. lemon pepper
  • 1 lemon
  • 1 Tbs. Thyme
  • 1 Tbs. Tarragon
Instructions
  1. heat oil in a large pot over medium-high heat. Add onions, carrots, celery and Anaheim peppers and cook until tender, about 8 minutes.
  2. Add garlic, lemon pepper, thyme and tarragon, cook about 1 more minute.
  3. Add chicken broth, chicken and bring to a boil.
  4. Turn heat down to simmer and cook chicken broth 20 minutes.
  5. Cook orzo separately and add to the pot. Or add orzo to the pot and cook in the pot. If you cook it in the pot the mixture will be much thicker with less broth.
  6. Season with more salt and pepper if desired. Mix in the juice of one lemon and lemon slices and serve.
  7. NOTE – your chicken can be raw OR cooked. If you are cooking your chicken raw, cut it into cubes OR you can add chicken breasts and cook until cooked through. Then take the chicken breasts out just before you add the orzo and shred it. Return the shredded chicken meat to the soup and add orzo and serve when orzo is cooked through.

    This is amazing and takes less time, lemon soup is also helpful for health, we have used at least one lemon in a day. both Chicken + lemon work awesome together.

    It looks great, but I have a question–is the chicken already cooked when it goes into the soup?

      Hi Emily! Mine was raw. I just chopped it up and added it at the beginning and it cooked. But you can add it already cooked. Or if you want your chicken shredded you can cook it raw at the beginning and take it out and shred it right before you add the orzo.
