My daughter graduated from college last weekend. We are so THRILLED for her. My mom came out to celebrate the big day with us. While she was visiting we were able to attend a graduation party and we brought my mom’s famous Fresh Strawberry Cream Cheese Cake. It seriously is THE BEST cake ever. My kids don’t really like cake but EVERYONE loves this one.

The base of the cake is a plain white cake mix. It’s perfect for ANY type of party or occasion. Fresh strawberries are the star of this cake. And the frosting is light and doesn’t overwhelm the fruit.
You also can make this cake a day ahead of your party or occasion. Just keep it refrigerated and take it out when you are heading to your party.
You make your cake in a jelly roll pan. The cake will rise to the height of the pan, then you add the frosting and then the layer of glazed strawberries. It’s a beautiful cake that will be the centerpiece of the party!

Ingredients
- 2 pounds fresh strawberries, sliced
- 2 packages (8 ounce each) cream cheese
- 1 16 ounce tub of whipped topping, thawed
- 1 white cake mix
- 2 tubs strawberry glaze (you can find these in the produce section by the fresh strawberries)
Instructions

Grease a jelly roll pan and preheat oven to 350-degrees

Make cake mix according to mix instructions. Pour cake mix into jelly roll pan. Bake according to cake directions.

Take cake out when done and let cool completely.

With an electric mixer beat cream cheese and whipped topping until combined.

In a large bowl combine the fresh strawberries and glaze util combined.

Pour whipped topping/cream cheese mixture over the top of the cake until covered.

Layer the strawberries/glaze mixture over the top of the whipped topping mixture until covered.

Chill cake in refrigerator for at lease an hour before serving. Can be refrigerated for up to one day before serving.
