Chaffle BLT Sandwiches with Herb Mayo
There’s nothing I look forward to in the summertime like a fresh BLT! There’s something magical about vine-ripe tomatoes and greens with bacon. Yum! I’ve been following a low-carb lifestyle for the past year so when summer rolled around I knew I needed a fresh BLT that fit in with my keto life!
What is a Chaffle?
A chaffle is basically a waffle that is made out of eggs and cheese. It’s also a great alternative to bread! Many chaffles are made of only eggs and cheese but as I experimented with chaffles I discovered that I like a more bread-like texture so I added a little almond flour to make my chaffles have a more bread-like consistency and they are delicious!!
Chaffle BLT Sandwiches with Herbed Mayo
I add a little extra taste by making an easy herbed mayo. I use a mayo made out of avocado oil which aligns better with a keto lifestyle than regular mayo, but you can use either type of mayo to make herbed mayo! All you do is add whatever type of herbs you like and a little black pepper. It really zests up the sandwich and takes it to another taste level!
What Do You Put On A BLT Sandwich?
I like to add a couple of layers to my BLT sandwiches. Here’s what I add:
- Chaffle bottom
- Layer of herbed may
- Lettuce
- Tomato
- Bacon
- Lettuce
- Tomato
- Bacon
- Herbed Mayo
- Top Chaffle

Keto Chaffle BLT Sandwiches with Herb Mayo
Chaffle BLT Sandwiches with Herb Mayo. Nothing's better in the summer than a fresh BLT. Stay on track with this low-carb, keto-friendly BLT!
Ingredients
Make Chaffles
- 2 large eggs
- 1 cup cheeses
- 1 Tbsp. almond flour
Add BLT toppings
- 1 large tomato
- 1 cup lettuce
- 4 slices bacon, cooked and cut in half
Make Herb Mayo
- 2 Tbsp. mayo can be regular or avocado mayo
- 1 Tbsp. fresh herbs, chopped
- 1/4 Tbsp. ground pepper
Instructions

In a medium bowl, mix eggs, cheese and almond flour until combined.

Heat up waffle iron, add chaffle mixture. Close lid and let cook until the light tells you the waffles are done, about 3 minutes.

Make Herb Mayo — combine mayo, pepper and herbs.

Add 1/2 Tsp. of mayo to the underside of one chaffle.

Layer lettuce, tomatoes and 2 pieces of bacon (one slice of bacon cut in half). Repeat another layer of ingredients.

Add 1/2 Tbsp. of mayo to the underside of nother chaffle and put it mayo-side down on top of the toppings to complete the sandwich. Enjoy!
