One of my favorite childhood memories is my mom’s light and fluffy green chili egg casserole. It only takes 7 ingredients to create and it’s a no-fail recipe that is super easy to make!

Another reason I love this recipe is that you can make it ahead of time, then pop it into the oven right before your breakfast or brunch.

Green Chili Egg Casserole is perfect for a weekend breakfast or a big brunch like Mother’s Day or Easter! It’s easy to pop into the oven and while it cooks you can prepare the other dishes for a brunch to remember.
What Toppings Do You Add to Green Chili Egg Casserole?
There are several different toppings pair well with Green Chili Egg Casserole. Since green chilies are a main ingredient for the casserole, southwest toppings like cilantro, pico de gallo, salsas and sour cream are perfect toppings.
Create a Topping Bar
Another idea is to create a topping bar that goes along with Green Chili Egg Casserole. Put the toppings like cinlantro, onions, pico de gallo, salsas and sour cream in small bowls and breakfast or brunch guests can add their favorites to their individual portions.
Make Individual Green Chili Egg Casseroles
Instead of baking Green Chili Egg Casserole in a 9×13 inch pan, you can divide the mixture into twelve portions and add them to a muffin tin for individual Green Chili Egg Casseroles! If you do this, you will want to cut the baking time from 40 minutes to 25 minutes and check them from that point on, until a fork inserted into the middle section comes out clean.
Green Chili Egg Casserole Recipe
Light and Fluffy Green Chili Egg Casserole
Mom's Classic Green Chili Egg Casserole. Whip up this classic, light and fluffy egg casserole with just a the perfect combination of cheese and tangy green chilis.
Ingredients
- 10 large eggs
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 cups shredded cheddar cheese you can substitute other cheeses like Monterey Jack or Pepper Jack cheese
- 2 cups cottage cheese if you want to reduce calories you can use low-fat or fat-free cottage cheese.
- 2 4-ounce cans chopped green chilies
Instructions

In a mixing bowl, combine eggs and whip for 3-4 minutes until they are a light, even consistency. Add flour, baking powder and salt. Whip until combined. Then add cheese, cottage cheese and chilies and stir to combine.

Pour mixture into a greased 9×13 pan, or greased muffin tins. Bake at 350-degrees for 35-40 minutes if baking in pan, or 25 minutes if baking in tins. Insert a fork into the center and if the prongs are clean when taken out, the casserole is done. Let sit for 5 minutes and serve. Optional toppings — sour cream, cilantro, salsa or pico de mayo.
