I love a simple dinner idea. This taco bake is a recipe that I can make that the whole family loves! The kids put the taco bake over chips for a hearty nacho dinner and I layer greens under mine to for a low-carb dinner that is so yummy!
Make Cheesy Taco Bake Ahead of Time
One of the reasons I love this recipe so much is that I can meal prep it at the beginning of the week. Then I just cover the casserole dish with plastic wrap and I have dinner ready to go. All I have to do is pop the casserole in the oven and I have dinner on the table in half an hour!
Cheesy Taco Bake is a 35 Minute Meal
Another reason I love making this taco bake for dinner is how fast it comes together! Only 10 minutes of prep work and 25 minutes in the oven and I have dinner ready in less than an hour!
Cheesy Taco Bake Makes a Great Appetizer
This is also a great recipe if you have to bring an appetizer to a party or game day event! Just prep the casserole and then pop it in the oven when you get to the party! Guests can dip chips in the taco bake or eat it plain.
Warm Up Cheesy Taco Bake Leftovers
We always have some of this taco bake left over and it makes a delicious lunch the next day too! Some nights when I make family pasta or soup that I can’t while maintaining a keto diet, I can warm up a portion of the taco bake and it’s a wonderful quick dinner for me.

Low Carb Cheesy Taco Bake
Low Carb Cheesy Taco Bake – Keto. A cheesy keto taco casserole that is the perfect topping over salads for you and over chips for your kids! All of the taste of tacos with a fractions of the carbs!
Ingredients
- 2 pounds ground beef (I used ground chicken)
- 1/2 large yellow onion
- 2 cloves garlic
- 1 1/2 cups ricotta cheese
- 1 1/2 cups green, red and/or yellow peppers, sliced
- 1 large jalapeno pepper, sliced
- 1 packet taco seasoning (4 Tbs.)
- 4 large eggs
- 3 cups Mexican Cheese, grated
- optional toppings sour cream, salsa, tomatoes, cilantro
Instructions

1. In a large skillet, brown ground beef (or chicken or turkey), yellow onion and peppers. Until meat is cooked through.

2. Add taco seasoning and mix until incorporated.

3. Put beef mixture at the bottom of a casserole dish and spread out evenly.

4. Add ricotta cheese. Place scoops evenly on top of beef mixture.

5. In a small bowl, combine 4 eggs and half of cheese and mix.

6. Pour egg + cheese mixture over the top of the ricotta scoops and smooth it evenly so it covers all of the beef mixture.

7. Add sliced jalapeno over the egg and cheese mixture.

8. Layer the remaining cheese over the jalapenos.

9. Bake at 350-degrees for 25 minutes, or until cheese melts and mixture is bubbling.

10. Serve over mixed green or nacho chips (for non-keto). Top with sour cream, salsa and/or cilantro)
