Hello Tatertots and jello readers… its me again Jen- from Craft-O-Maniac.
Boy am I lucky to be visiting again! I love it here!

I am so happy to be sharing, a simple, delicious, and my daughters FAVORITE RECIPE.

My
“Creamy Green Chile Chicken Enchiladas”
THEY ARE KILLER GOOD! and did I mention SO EASY!
what you need:
1 can or green chilies
1 can of cream of chicken soup
1/2 c. of milk
1 3/4 c. of graded cheddar cheese
1 tbsp of dried onion
salt and pepper
5 boneless skinless chicken breasts cooked and chopped
10-12 tortillas

prepare:
Start by chopping up your thawed chicken. Cook the chicken until done. Season with your onion flake and salt and pepper (eye ball s&p) set aside.
next mix in your milk, cream of chicken, and about a cup of cheese. Mix thoroughly. Save some of your cheese to garnish on the top of your enchiladas.
Spread your cream mixture down the center of your tortilla, then add some of the chicken down the middle as well. Pinch in the sides of your tortilla and roll them. Place the enchiladas in a sprayed baking dish, seam side down.
If you have any of the cream mixture left over spread the rest down the top center of your tortillas and garnish with a little more cheddar cheese.
Bake at 360 for 18  minutes.  Serve with sliced tomato or on some shredded lettuce with tomato. For a side you can have black beans, or re-fried beans. ENJOY!
Thanks again jen for having me today. xo. I sure love meeting new people and would love to have you come visit me at CraftOManiac. You can also find COM on FB here. or on Pinterest here.

Jen: Enjoy Disneyland, I look forward to Disney inspired crafts when you get home 🙂

Everybody: You can make this dish as a casserole, too. I have made it for years by just layering the tortillas and chicken mixture, topped with grated cheese. Super easy!

Just a note to everyone out there in Mormonland — if you’re taking a meal to someone who’s just had a baby, they’ve probably already gotten a lot of chicken enchiladas, and although delicious (and they’re grateful for anything!), you might want to consider something else for variety. That is all. Thank you.
