Instant Pot No-Knead Bread
Forget the hours of waiting for bread to rise and multiple risings needed to make traditional bread. No-knead bread is a basic, fool-proof recipe that will turn out every time.
Why Would You Make Bread in an Instant Pot?
The reason to use an Instant Pot to make the dough for this bread is that you can save 10 hours of time by cooking the dough on a very low “yogurt setting. This puts the dough in an enclosed setting that speeds up the rising time. The trick to no-knead dough and the reason it works without multiple kneadings is that the rising time is so long.
Making Instant Pot No-Knead Bread is Easy
It only takes a few minutes to make the dough, then pop it into your Instant Pot and come back for it in 4 hours. I usually make the dough and start the Instant Pot in the morning and by lunchtime it’s ready to be baked.
Bake No Knead Bread in a Dutch Oven or Heavy-Duty Pot
Once the dough is done in the Instant Pot, transfer it to another sheet of parchment paper, roll it into a tight ball. Then cut three cuts on the top of the loaf and add some extra herbs.
Use Parchment Paper to Keep the Dough from Sticking
I use parchment paper to keep everything clean and simple. The parchment paper works in the Instant Pot to keep the Dough from sticking to the bottom and sides. As the dough rises, it expands and the parchment paper makes it easy to take out of the Instant Pot liner.
Instant Pot No-Knead Bread is Soft on the Inside and Crunchy on the Outside
Because no-knead bread is very wet, its important to bake the dough at a high temperature. This is excellent because the high heat setting bakes the outside fast for a crunchy crust and seals the moisture of the bread inside for soft bread. I also use parchment paper inside of the pot to keep the dough from sticking to the pot.
What Herbs Do You Add to No-Knead Bread?
This bread is great for adapting to different flavors. You can make the basic recipe without herbs if you want. I added rosemary, thyme, dried basil land dried oregano. But I have also made this bread with sun-dried tomatoes and Parmesan cheese and it was delightful!
Take The Lid Off the Pan After 30 Minutes
Bake the bread at 450-degrees with the lid on for 30 minutes, then remove the lid and let the bread bake for another 15 minutes. This additional time will allow the outside of the bread to acquire a golden finish!

Ingredients
Starter
- 1 package yeast (1 1/4 tsp.)
- 1 tsp sugar
- 1 1/2 cups warm water
Add
- 3 cups all-purpose flour
- 1 3/4 tsp salt
- 1/4 cup olive oil
- 1 tsp rosemary
- 1 tsp thyme
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
Instructions

In a large bowl, add water, yeast package and sugar. Stir gently and put plastic wrap over the top of the bowl. Let sit for 10 minutes.

The yeast mixture will froth. Now add the flour, olive oil, herbs and salt. Stir until incorporated. You might have to add a little extra flour or olive oil, depending on if your mixture seems to wet or too dry. You want the dough to be very wet, but to retain a ball shape.

Take a piece of parchment paper, spray it with non-stick cooking spray and put it inside your Instant Pot liner. Lay the dough on top of the parchment paper at the bottom of the pot.

Close the lid and program the Instant Pot to cook – pressing the "yogurt" button and setting the time or 4 hours.

Once the 4 hours have passed, take another sheet of parchment paper, put a coating of flour on it and lift the dough out of the Instant Pot. Roll the dough from the first sheet of parchment that it cooked inside onto the new piece of parchment paper. Sprinkle the dough with some flour and shape it into a tight ball shape. Cut the dough on too 3-4 times and sprinkle with small amount of herbs.

Set your oven to 450-degrees and preheat your dutch oven or oven-proof pot. Once it is hot, take it out of the oven and put the parchment paper wrapped dough at the bottom of the pot. Put the pot in the oven with the lid on and cook for 30 minutes.

After 30 minutes, take the lid off your pot and continue cooking the dough for 15 more minutes. (total cooking time — 45 minutes)

If you don't have an Instant Pot, you can make this recipe by making the dough as instructed, but keep the dough in the bowl. Cover it with a dish towel or plastic wrap and keep it out on a counter for 14-18 hours for a slow rise. Then bake the same as directed.
What to Serve with No-Knead Herb Bread?
Instant Pot No-Knead Herb Bread is excellent to use as sandwich bread. I love toasting it and eating it slathered in butter – yum! It’s also excellent with soup like our favorite Tuscan Potato Sausage Soup, Slow Cooker Chicken Noodle Soup or Pumpkin Chili. We also love eating it with salads like this Spring Salad, our popular Orzo Salad and this 6-layer Italian Salad!
