Slow Cooker Chicken Tandoori Recipe!

I’m always looking for a yummy slow cooker recipe. Here’s one that my kids love. It has a beautiful flavor without being too spicy — Slow Cooker Chicken Tandoori. And it’s healthy too!

Tandoori chicken is a popular Punjabi dish  consisting of roasted chicken, prepared with yogurt and spices.

And it’s so simple. Just throw the ingredients in the slow cooker and come back in a few hours to a house that smells divine and a dinner your family will love!

Slow Cooker Chicken Tandoori

Here’s the easy recipe:

Ingredients:

6 skinless, boneless chicken breasts

Juice from 1 lemon

1.5 cups of plain, greek yogurt.

1 T. olive oil

1small red onion, chopped.

4  T. tomato paste

3 cloves of garlic

2 t. ground coriander

1.5 t. ground cumin

1.75 t. paprika

1 t. ground ginger

2 T. fresh cilantro

Salt (optional)

Basmati Rice to serve with the chicken dish

Directions:

Set your slow cooker to either 7 hours on low or 4 hours on high.

Then put the chicken breasts on the bottom of the slow cooker and add the 1/2 red onion.

Squeeze the fresh lemon juice over the breasts.

Then combine 1 cup of plain, greek yogurt; olive oil; half of the onion; garlic, ginger, tomato paste, coriander, cumin, 1.5 t. paprika and 1/2 t. salt into a blender and make a paste.

Then pour the paste over the chicken breasts.

Let cook until 1 hour before you want to serve the dish. Take two forks and shred the chicken and mix the mixture together and let cook one more hour.

While the dish is finishing cooking, combine the remaining 1/2 cup of fresh yogurt, a pinch of salt  and the .25 t. paprika in a bowl.

Top the chicken with the yogurt sauuce and serve over rice. Add fresh cilantro to the top of the dish and enjoy!

    Um, yeah. I just made this for dinner tonight and it was AH-MAZE-ING. This is definitely my new favorite slow cooker recipe! Before this it was my three bean chili, but the tandoori chicken totally just kicked its butt. This one’s a keeper according to the whole family (husbeast and 10 month old).
