Recipe: Rice Krispie Treat for One!

Microwave Rice Krispie Treat for One

Hello Tatertots and Jello friends! It’s Melissa from No. 2 Pencil and I’m here again to share a super fun recipe idea. A microwave Rice Krispie Treat for One. It’s made just like the classic, but you can whip this up in even less time. This recipe is perfect for kids and tweens. They get to make a treat using the microwave, just for themselves. No need to turn on the stove or oven, and they can practice measuring and mixing.

Over at No. 2 pencil, I love sharing recipes for single serving desserts, like my Chocolate Chip Cookie in a Cup and my Microwave Brownie in a Cup. They are so fun to whip together, and I love creating the recipes.

Let me show you how quick and easy this Rice Krispie Treat for One comes together:

Start by melting 1/2 a tablespoon of butter in a microwave safe bowl. Then add four large marshmallows and microwave again for about twenty more seconds. The marshmallows will start puffing up, so keep an eye on them so they don’t come over the edge of the bowl.

Once you remove the bowl from the microwave, they will deflate again.

Stir the melted butter and marshmallows together until smooth.

Mix in 1 cup of Rice Krispie cereal and stir until well blended.

You can eat it warm straight from the bowl, or spoon into another container or cup. Once cool, you can pop it out and enjoy.

This is a really good sized Rice Krispie treat, so you can indulge or share if you are so inclined. Either way, it makes a fun and easy single serving treat!

    Made this over the weekend and melted a handful of caramels with a splash of milk. My son was helping unwrap the caramels so I don’t really remember how many we used, 8 or 10? After pouring the caramel sauce on top we sprinkled some Flur de Sel and put it in the fridge. SO YUMMY!! And just enough! THANKS!

    Delicious! I only had mini marshmallows and so I googled it and turns out 1 large marshmallow = 13 mini marshmallows. 🙂

    This is both dangerous and safe at the same time. Dangerous, because now I can have a rice crispy treat whenever I want and safe, because it will save me from making (and then eating) an entire batch of rice crispy treats. Not sure which route this will go…

    I totally just plugged this in to the Weight Watchers recipe builder, and it’s 4 points+ for the entire serving! Will definitely be trying this as an occasional snack. Thanks for sharing this!!!
