I had the wonderful opportunity to get together with some great friends last Saturday at Shelley’s home for a FABULOUS night of Macaron baking, taught by the adorable Mercedes White from Mercedes Macarons.

I learned so much!! First of all — do you know what the difference is between Macaroons and Macarons?? My dad’s favorite cookie was macaroons and I can tell you that what we made on Saturday night were NOT the same thing. Macarons {with ONE “O”}is the correct spelling for these french delicacies. And you can fill them will all kinds of fillings — from sweet to savory, even berry fillings! They are incredibly light, with a slight crunchy outside, soft inside and at only 70 calories per cookie – a delightful treat!!!
There are also quite a few secrets to making the perfect Macaron. I will tell you a few, but I’ve been sworn to secrecy on a couple. The first thing you need to know is measurement is key. Also, precise mixing time is a must. If you over-mix, the Macaron will not rise.
