Our new favorite OREO cookies are the Carrot Cake cookies. They are SO good – they taste just like carrot cake with a cream cheese center. My son’s favorite cake is carrot cake, so I thought it would be fun to combine our love of carrot cake with the Carrot Cake OREO cookies! A match made in heaven.
I took my buttercream frosting recipe and added the crushed OREOS and they were a complete hit!
Beat the Butter for Fluffier Frosting
The secret to my buttercream frosting recipe is BEATING the butter first. Beating the butter makes the frosting SO light and fluffy. Then you add in the powdered sugar, one cup at a time until it is incorporated. Followed by a little whipping cream and vanilla. The last step is folding the crushed OREO Carrot Cake cookie crumbs.
Crush Your OREO Cookies in a Food Processor
I crushed the OREO cookies by putting them in a ziplock bag and crushed them with a rolling pin. After trying this method, I thick it makes more sense to put them in a food processor and run it. This will make the crumbs smaller and it will be easier to pipe the frosting onto the cupcakes. If you are not piping the frosting and like a more chunky frosting, you can crush the OREO cookies by hand and spread the frosting on your cupcakes or cake.

How to Make Carrot Cake OREO Buttercream Frosting.
The BEST OREO Carrot Cake Cookie Frosting Recipe
Ingredients
- 3 sticks unsalted butter at room temp
- 6-7 cups powdered sugar
- 2-3 T. heavy whipping cream
- 1 t. vanilla extract
- 15 OREO Carrot Cake Cookies, crushed
Instructions

Put butter in mixing bowl and whip at high speed for 4-5 minutes. Butter will turn a lighter shade.

On low speed, add powdered sugar, one cup at a time, until completely incorporated. Add the whipping cream in between to keep the mixture whipping smoothly.

Once the powdered sugar and whipping cream are incorporated into the butter, whip the mixture on high speed for another minute.

Pour crushed OREO cookies into frosting. If you plan to pipe the frosting onto the cupcakes, be sure to crush them with a food processor so the pieces don't clog the piping tool. Add vanilla and whip at high speed for another minute.

Pipe onto cupcakes and put a Carrot Cake OREO cookie on each cupcake.
