Do you ever wish you were at the kids’ table still? Me too! Especially during the holidays, the kids seem to have the most fun!
I always find it a challenge to make sure I’m making nutritious choices for my kids during the holidays. Thanks to Horizon Organic, I sampled their awesome organic milk and found it the perfect complement to my daughters’ favorite cookie recipe!
(As you can see in the picture, we also made some eggnog cookies using Horizon eggnog – yummy and lower fat than traditional eggnog.)
There’s so much going on during the holidays, especially at family holiday meals and snack time, that sometimes I feel proud just making sure they’re fed! But with a little thought, I’ve been doing better at making those choices. One of the things I like about choosing Horizon Organic is their pioneering role in the organic dairy movement and their ongoing commitment to family farms!

You can play with the spice ingredients in the recipe below – we like it this way and it’s a great blend of savory and sweet. We were inspired by this recipe but we’ve adapted it to make it our own now.
Here’s the recipe:
Chewy Ginger & Spice Molasses Cookies
Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cloves
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup 1 stick melted, unsalted butter (like Horizon Organic)
- 1/3 cup granulated sugar
- 1/2 cup dark molasses
- 1/4 cup packed, dark brown sugar
- roughly 1/2 cup sugar for rolling the cookie balls before cooking
- Parchment paper
- 2 cookie or baking sheets
Instructions

Turn oven on to 375 degrees.

Mix flour, baking soda, spices and salt in a mixing bowl.

Mix egg, butter, molasses, granulated sugar and brown sugar in a bowl.

Combine the flour/spice "dry" mix into the molasses "wet" mix.

Mix well.

Pour the roughly 1/2 cup sugar into a small bowl - you'll be rolling the dough balls in this.

Scoop out dough, approximately 1 tsp at a time. Roll it into a ball - about the size of a large marble but smaller than a ping pong ball. (You're shooting for about 30 cookies, so this will help you gauge dough ball size.)

Roll the ball of dough in the bowl of sugar to coat all sides.

Place sugared dough balls onto parchment paper on cookie sheets, about 2 inches apart.

When the sheets are ready, cook them side by side or one at a time in 375-degree oven for 8-10 minutes or until cookies are ready. Watch for the cookies to look cracked, just set around the edges and puffy. If you cook them longer they'll still be good -- just not as chewy.

Cool and serve.

Note: I've made this substituting applesauce for the butter. I like the butter version better, but it's still yummy.
