Slow Cooker Southwestern White Chili Chicken Recipe. I don’t know what I would do without my slow cooker in the fall and winter. It’s so easy to pop the ingredients in the slow cooker and come back at dinner with the house smelling wonderful and dinner ready!!
I am always looking for new slow cooker recipes. Some of our favorite slow cooker recipes are chili recipes. Like our Pumpkin Chili:
They do so well in the slow cooker. I’ve made a lot of sausage and beef slow cooker chili recipes, but not many chicken chili recipes. I’ve been experimenting to find a really good chicken chili and I’m happy to say that this one is our favorite so far! One of the traditions in our home is making chili on Halloween night. It gets pretty chilly in Utah at the end of October and we love coming home from trick-or-treating to a warm and hearty bowl of chili! This one is chock full of shredded chicken and you add a cube of cream cheese about an hour before you serve the chili. The cream cheese makes the chili so rich and creamy!

Here’s the yummy recipe for Slow Cooker Crockpot Southwestern Chili Chicken:
Slow Cooker Southwestern White Chicken Chili Recipe
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 yellow and red pepper, diced
- 3 boneless chicken breasts
- 1 14. oz. can diced tomatoes
- 3 teaspoons chili powder
- 1 teaspoon oregano
- 1 teaspoon cumin
- 2 cans white beans (navy beans)
- 1 can sweet corn
- salt and pepper to taste
- 8 ounces cream cheese
- 4 slices bacon, cooked and cut up
- 3 stalks green onions, sliced
- Saute onion with 2 tablespoons of olive oil in a medium frying pan for 10 minutes over medium heat until the onion is translucent. Add onion to slow cooker.
- Mix all ingredients, except cream cheese, bacon and green onions in the slow cooker.
- Cook on high for 5 hours, or low for 7 hours.
- Shred chicken about an hour before and cut up and add the cream cheese.
- Mix the cream cheese every 10 minutes until it is all combined.
- Garnish with a dollop of sour cream and green onions. Enjoy!

I am making this for dinner tonight and am also wondering where the liquid comes from. I drained my corn and beans before realizing there was no other liquid listed except for the diced tomatoes. After cooking it for awhile I realized it needed something, so I added some chicken broth. Hope it comes out okay!

I don’t see where the liquid comes from, assuming you don’t drain the corn or beans but is that really enough liquid?

I made it and it was wonderful! I did add a can of cream corn as well but the liquid from all of the cans of vegetables was plenty to make this an awesome soup! I ended up frying the bacon and just adding it to the soup when I added the cream cheese although it may have been intended as a topping. At any rate, this as a success and a recipe I will use again!
