No Bake Mini Peanut Butter Chocolate Pies

Hi Tatertots and Jello readers! It’s Laurie from Gallamore West. I hope you’re loving summer and all of the fun that comes along with it. One of my favorite parts of summer is summer desserts that are amazing, delicious and don’t require turning on the oven! These No Bake Mini Peanut Butter Chocolate Pies are just that.
 
Plus, they are really easy to make. You only need these few ingredients:

 
No-Bake Mini Peanut Butter Chocolate Pies
 
14 Oreos, finely crushed
3 tablespoons butter, melted
1/2 cup creamy peanut butter
1 cup Cool Whip
3/4 cup powdered sugar 
1/2 block cream cheese, softened
1/2 teaspoon vanilla extract
 
First, make your crust by finely crushing the Oreos in a blender. If you don’t have one, you can use a Ziploc bag and a rolling pin. Then stir in the melted butter.  Using a cupcake pan lined with 12 cupcake liners, add one tablespoon of crust to each cupcake liner. Press with the back of the spoon to firmly form the crust.  Second, in the bowl of a stand mixer, combine the peanut butter and cream until creamy and smooth. Add in the powdered sugar and vanilla extract. Fold in the Cool Whip to combine. Add one spoonful of the peanut butter mixture to each cupcake liner and smooth gently using the back of the spoon. Refrigerate for at least one hour until serving for a soft-set dessert. Or freeze them for firmer desserts.
