Lemon Strawberry Croissant Brunch Bake
I am always looking for the best casserole to make for special breakfasts and brunches. My kids LOVE strawberries so I have been experimenting with different kinds of strawberry breakfast ideas. This year for Mother’s Day I made our favorite one yet – Lemon Strawberry Shortcake Brunch Bake.
It’s kind of a cross between strawberry shortcake and strawberry cheesecake. The croissants are light and flaky, and soak up the lemon cream topping.
The best part is, this casserole only takes about 10 minutes to put together and only 6 ingredients! All you need to make this easy casserole are: 8 croissants, 1 package of cream cheese (you can use reduced fat), strawberries, half-and-half (you can use reduced fat), eggs, Lemon Cream filling.
To make it, cut all of the croissants in half and lay them in a large casserole dish. Top the croissants with sliced strawberries. Cover the strawberries with the tops of the croissants.
Whip the topping. Add the package of softened cream cheese, 2 large eggs, 1 cup of half-and-half and 1 cup of Lemon Cream filling. Mix until creamy.

Pour the filling over the croissants and bake at 350-degrees for 1 hour. Then top with fresh fruit and strawberry syrup (optional).

- 6 ingredient Lemon Strawberry Shortcake Cream Brunch Bake
- 6-8 croissants
- 2 cups sliced strawberries
- 1 package cream cheese, softened (can be reduced fat)
- 2 large eggs
- 1 cup half-and-half (can be reduced or non-fat)
- 1 cup lemon cream sauce (I used Duncan Hines)
- strawberry syrup (optional)
- Preheat oven to 350-degrees and spray a large casserole dish with non-stick spray.
- Cut croissants in half and lay the bottoms of the croissants on a large casserole dish.
- top croissant bottoms with sliced strawberries.
- Cover the strawberries with the croissant tops.
- Make the topping — add softened cream cheese, half-and-half, eggs and lemon cream in mixer and whip until creamy.
- Pour the topping over the croissants and sprinkle with a few strawberries.
- Bake in oven for 1 hour.
- Top with remaining strawberries and strawberry syrup (optional)
