Corn Salad is a Family Recipe
We have been making corn salad for years. 20 years ago my mom gave me a family recipe book and it’s become one of my most prized possessions! I use it all the time. One of the recipes in my mom’s recipe book is a corn salad that she made every summer when I was growing up.
Grilled Corn Salad is a Spin on a Family Recipe
In my mom’s corn salad she uses either frozen corn or canned corn with fresh veggies. And her recipe IS wonderful. I wondered how wonderful her recipe would be if I took FRESH corn on the cob and grilled it for the salad. And while I was at it I decided to grill the red and yellow peppers too!
How Long Do You Grill Corn?
I wondered if grilling the corn would still have the crunchy texture that my mom’s corn salad recipe salad had. Usually we grill our raw corn for 10-12 minutes to cook it all the way through. Since I wanted the corn in this salad to still be crunchy, I grilled the cobs for 6-7 minutes. That gave the outside of the corn a grilled appearance but the corn kernels weren’t cooked all the way through so they were still crunchy! When you take the corn off the grill, bring it inside and put it in a bowl with ice for an ice water bath to stop the cooking.
What Veggies Do You Put in a Corn Salad?
Of course since it’s a corn salad, you want to have a lot of fresh corn. I used 6 full cobs of corn. I also added 2 red bell peppers and 2 yellow bell peppers that I also grilled. In addition to the corn and peppers I also added 3 cups of cherry tomatoes, 1 large jalapeno pepper diced up very small, 1 cup of green onions and 1/2 of a sweet white onion. But you can add any veggies you want, including avocado — which would be wonderful!

Making your own salad dressing is easier than you might think! To make a delicious citrusy, tangy lime vinaigrette all you need is white rice vinegar, olive oil, lime, a little yellow or spicy mustard and salt and pepper. So easy!
You Can Make Grilled Corn Salad in Advance
One of the things I love about this grilled corn salad recipe is the fact that you can make it ahead of time. I have made this the day before and it is just as good. Make the salad and keep it in the fridge. Toss the dressing into the salad, cover the salad and the flavors blend while it is in the fridge.

Grilling the corn and peppers takes the most time. Once you have them on the grill you can chop up the other ingredients. Be sure to turn them every couple of minutes so they cook evenly. Once the corn and peppers are done you just add the rest of the veggies, add the dressing and toss!

Grilled Corn Salad with Tangy Lime Vinaigrette. Looking for the perfect salad to make this summer? This one takes fresh corn and peppers and grills them to bring out the most flavor, mix more fresh veggies and top it with a refreshing citrus lime vinaigrette dressing.
Ingredients
- 6-8 cobs corn, husks and silk removed grilled, cut off the cob
- 3-4 red or yellow peppers, halved grilled, then diced
- 3 cups cherry tomatoes, halved
- 1/2 cup green onions, sliced
- 1/2 large sweet white onion, diced
- 1 large jalapeno pepper, diced
Tangy Lime Vinaigrette Dressing
- 3/4 cup olive oil
- 1/4 cup white rice vinegar
- 1 large lime, juiced
- 2-3 T. yellow mustard or grey Dijon mustard
- salt and pepper to taste
- fresh herbs, chopped (optional)
Instructions

Grill corn and peppers. Heat grill to medium high. Spray grill with non-stick spray. Grill for 6-7 minutes, turning every 2 minutes until grilled evenly.

Cup up the rest of the veggies and add them to a large bowl.

In a small bowl make the dressing. Whisk olive oil, vingear, mustard, lime juice, salt and pepper and herbs (optional).

Add grilled corn off the cob, diced peppers to veggie mixture. Toss dressing. Refrigerate at least an hour – overnight. Serve. Garnish with cilantro if wanted.
