I am all about easy recipes in the summer. I want to be out with my family enjoying the summer, not in the kitchen cooking! We had a family party last week and I needed a dessert. I knew I wanted to use all of the fresh berries that are available right now and combine them with a light and fluffy filling. Cue the puff pastry!
Puff pastry is so easy to use
It is also so light and fluffy when it bakes up. All of those thin layers of dough paired with butter are heavenly!
It only takes 15 minutes to make
Another reason I love this dessert is it only takes 15 minutes to make! Just pop the puff pastry in the oven and while it cooks you slice up the berries and whip the cream cheese filling.
Layer the fluffy cream cheese filling and fruit on top!
Then take the puff pastry out of the oven, let it cool for a few minutes and then layer the cream cheese filling and top with the berries. YUM!
You can serve this dessert right away or refrigerate it until you are ready to eat!

The easiest 15-minute cream cheese berry tart

Ingredients
- 1 package puff pastry (2 sheets)
- 3 cups berries - I used strawberries, blueberries and raspberries
- 2 T. sugar or splenda naturals
- 1 8-ounce package cream cheese (I used light cream cheese)
- 1 cup heavy cream
Instructions

Pre-heat oven to 400 degrees. Combine the two pieces of puff pastry together to fit your baking sheet, rolling with a rolling pin. You can use a little water to fuse the two edges together.

Cut the edge of the tart about 2 inches in all the way around. Add a little water and lay the edges on top of the tart, forming a rim to hold the filling in. You can also just fold the edges over to create a rim too.

Prick the puff pastry with a fork. Place it in the oven for 10 minutes.

While the puff pastry bakes, chop up the berries in a bowl and stir in the sugar.

Also make the filling. Whip the cream cheese and heavy cream together until light and fluffy.

When the puff pastry is cooked, take it out of the oven and let it cool. Then add the filling and put the berries on top.
It’s the perfect dessert to serve at a Summer BBQ!!
