Cream Cheese Strawberry Shortcake

Hello, Tatertots & Jello readers! This is Sarah from Bombshell Bling, and I am beyond thrilled to be guest posting here at TT&J! Back in my pre-blogging days a crafty friend of mine introduced me to her blog obsession: Tatertots & Jello. When I called her last year to tell her how much fun I had having lunch with the lovely Jen at her darling cottage she almost died! She now thinks I am a big deal just because Jen is nice enough to let me be her fangirl. Haha. Little does she know! 😉

Cream Cheese Strawberry Shortcake by Bombshell Bling for TT&J

Anyway . . . aside from being here to gush about the fabulousness that is Jen and her bomb creative blog, I want to share a summer recipe with you that is majorly delish: Cream Cheese Strawberry Shortcake. In the past I have always made individual strawberry shortcakes that have an almost biscuit-like consistency, but WOW is this simpler! A woman at my church gave me this recipe, which she had tweaked a bit from the original, and then I tweaked it a bit farther. We ended up making it for our entire church congregation and it was a huge hit. I hope that you enjoy it too!

Strawberry Shortcake-1

Cream Cheese Strawberry Shortcake

Cake

3 cups Bisquick mix (12 oz.)
1 cup sugar
1 stick butter (1/2 cup)
1 cup buttermilk
2 teaspoons vanilla
2 eggs
1 (3.5 0z) box French Vanilla pudding mix (3.5 oz)

Topping

1 cup whipping cream
1 (8 oz) package cream cheese1/2 cup powdered sugar
2 teaspoons vanilla
6 cups (about 2 lbs) fresh strawberries, sliced

Heat oven to 335 degrees and grease a 9×13 pan.

In a large bowl, beat together all of the cake ingredients until mixed together. Pour into the greased pan.

Bake 35-45 minutes.

Pour the whipping cream into a small bowl and mix until there are soft peaks. Set the whipping cream aside.

In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla.

Fold the whipping cream into the cream cheese mixture.

Frost the cooled cake and top with strawberries. Refrigerate cake if needed.

Serve and enjoy!

    Does the pudding mix go in the cake part or the topping? It is listed in cake but directions have it with the other oart?

      I have the same question about the eggs? I’m guessing they go in the cake part, but the recipe directions say they go in the topping…which would be raw eggs?!

    This sounds wonderful!! My great grandma has a similar recipe involving pretzels on the bottom in place of cake and strawberry jello on top of that. Sounds bizarre but it’s the perfect mix of salty and sweet. I’ll be trying your version soon! My little girl loves to make strawberry desserts!
