Have you ever had a jalapeno popper? It’s one of our favorite appetizers. We make jalapeno poppers for New Years Eve each year. I thought it would be fun to create a jalapeno popper egg casserole for our Christmas brunch!!

Egg Casseroles for Brunch
I love breakfast casseroles because they are easy to make ahead of time. This one is great because you can make the egg batter ahead of time. Then pop it in the fridge and pour the batter into the ramekins the night before! Then just pour the batter in the ramekins right before you are ready to eat the next morning.
Mini Casseroles Elevate Brunch
Individual portions are so pretty when you are planning a brunch. Instead of making a large casserole, consider dividing it into ramekins. Individual ramekins are easy for brunch guests to grab and are the perfect serving size.
Low in Carbs High in Taste
I love eggs for breakfast because they are packed with protein and there are so many different ways to prepare them! This is one of my favorite recipes because I love the cheese paired with the spicy jalapeños. It’s such a great combination!
How to Make Jalapeno Popper Egg Casseroles
Add Eggs
Crack 12 eggs into a bowl
Cream
Next add 1 cup of whipping cream or half-and-half to the egg mixture.
Cream Cheese
Cut 4 ounces of cream cheese into small pieces and add them to the bowl.
Salt and Pepper
Then add salt and pepper to taste. Mix everything together.
Divide Egg Mixture Into Ramekins
Cook Bacon
Cook 8 slices of bacon and chop the bacon into small pieces. Sprinkle the bacon on top of the egg mixture.
Sprinkle Cheese on Top
Add half of the shredded chese on top of the ramekins.
Add Sliced Jalapeno
Slice the jalapeno and add 2-3 slices of jalapeno to each ramekin.
Bake at 350
Bake ramekins for 15-20 minutes.
Add Remaining Cheese
Sprinkle the remaining cheese on top of the ramekins. Put them in the oven for another 5 minutes, until the cheese melts.

Keto Low-Carb Jalapeno Popper Egg Casseroles. High in protein, low in carbs and filled with creamy eggs, gooey cheese with a kick of jalapeno!
Ingredients
- 12 eggs
- 1 cup whipping cream or half-and-half
- 4 ounces cream cheese, cut into small pieces
- salt and pepper to taste
- 2 cups cheese (I used Monterey Jack, shredded)
- 1 large jalapeno
- 8 slices bacon, cooked and chopped into small pieces
Instructions

Crack 12 eggs into a large bowl.

Add whipping cream, cream cheese and salt and pepper.

Mix well. Then divide mixture into ramekins.

Add bacon to ramekins

Sprinkle half the shredded cheese on top of ramekins.

Add sliced jalapeños to the top of each ramekin.

Bake at 350-degrees for 15-20 minutes.

Then add the remaining cheese to the top of each ramekin and put the ramekins i nthe oven until the cheese melts, another 3-5 minutes.
