Southwestern Puff Pastry Breakfast Tart
My cute sister Ashley – Modern Glam Home came to stay last weekend and my older kids came over for brunch. I wanted to make something extra special.
So of course I had to make heart waffles in my favorite waffle maker. I wanted to also make a savory dish. I decided to make a Southwestern Breakfast Tart and instead of using traditional dough I used puff pastry.
Mexican Puff Pastry Breakfast Tart
I truly believe that you can’t go wrong with puff pastry. It’s so light and fluffy and delicious. I usually associate puff pastry with sweet desserts, but it can be equally as good on savory dishes.
And the best part about puff pastry is that you keep it in the freezer and it’s so convenient to use. So when I needed something fast I pulled out a package of puff pastry and in less than half an hour I had a delicious savory tart.
Here’s the easy recipe for our Mexican/Southwestern Puff Pastry Breakfast Tart
- 1 package of puff pastry, thawed (two sheets)
- 1 egg (for egg wash)
- 8 eggs
- 1 cup cotija cheese
- 1 cup mozzarella cheese
- 2 cups veggies (green onions, red or green peppers, tomatoes) chopped
- salt and pepper to taste
- Preheat oven to 400-degrees.
- Lay a piece of parchment paper on a baking sheet.
- Then lay the puff pastry sheets on top of the parchment paper. You can either fold up the edges of the puff pastry or cut 1 inch sections of the puff pastry and lay it around the edges to create a crust.
- Mix an egg in a small bowl and brush the puff pastry tart with the egg wash.
- Bake the tart for 10 minutes, until it is golden brown and take it out of the oven.
- Sprinkle half of the cheeses on the tart.
- Gently crack the eggs and lay them around the tart so they don’t touch and run together.
- Then gently lay the other vegetables around the eggs.
- Sprinkle with remaining cheese and salt and pepper.
- Bake the tart for 16-18 minutes, until the eggs are poached.
- Take out and cut into squares.
This beautiful breakfast tart will be the centerpiece of your brunch.
