Catching Up

A couple of nights ago we had a chance to visit with some dear relatives we hadn’t seen for a while. We were invited to my aunt and uncle’s beautiful mountain home. My cousins and their families were there and everyone had a wonderful time catching up! Thanks for a wonderful evening!!!

I found a recipe that I “tweaked” a little to bring to the BBQ:

Summertime Pasta Salad 1 package bow-tie pasta, uncooked honey-ginger dressing (recipe to follow) 1 cup thinly sliced carrots 1 cup peeled zucchini 1/2 cup green pepper 1/2 cup red pepper 1/2 cup finely chopped red onion 1/2 cup sliced celery 8 slices, center-cut bacon, cooked and diced 1/2 cup finely shredded fresh Parmesan cheese Cook pasta according to package directions, drain. Rinse with cold water to cool quickly, then drain well. Prepare Dressing. Stir together cooled pasta, cooked bacon, vegetables and dressing. Salt and pepper to taste. Sprinkle with Parmesan cheese. Cover and refrigerate until cold. Makes approximately 12 servings. Dressing: In a medium bowl, whisk together 1/2 cup of cider vinegar and 1/2 cup of vegetable oil, 1/4 cup honey, 1 Tablespoon chopped fresh cilantro, 1 Tablespoon Dijon mustard, 2 teaspoons minced garlic and 1 teaspoon ground ginger. Mix well.
