The tomatoes are going crazy in our garden right now! I love going out and seeing all of the plump tomatoes on the vines. With the bounty of our garden I wanted to find some recipes to use all of our juicy tomatoes. Nothing compares to FRESH tomatoes!! This is one of our very favorite family recipes.

This salad is perfect to make in the summer with fresh tomatoes, corn and avocados. But you can also make it any time of they year using canned corn too!
It tastes even better the next day!
Put your salad in the fridge overnight. You will be amazed at how the flavors get even better.

You can add chicken and it makes a wonderful dinner. Or make it for a summer party or BBQ. It will be gone in minutes!

Tangy Corn, Avocado and Tomato Salad

Ingredients
- 4 cups fresh or frozen sweet corn (fresh or cooked for 3-5 minutes)
- 3-4 avocados
- 4 cups cherry tomatoes or large tomatoes, diced
- 1 cup green onions, chopped
- 1 large pepper (diced) I used green peppers, but you can use red or yellow too
dressing
- 4 T. Avocado oil
- 1 T. lemon zest
- 2 T. fresh lemon juice
- 1/2 cup cilantro, chopped
- 1/2 t. salt
- 1/2 t. lemon pepper
Instructions

Combine corn, avocado, tomatoes, green onions and peppers in a bowl.

Mix the dressing ingredients in a small bowl.

Toss the dressing with the salad.

Chill salad for 2 hours in the fridge. You can make this salad ahead and serve it the next day as well.
