The tomatoes are going crazy in our garden right now! I love going out and seeing all of the plump tomatoes on the vines. With the bounty of our garden I wanted to find some recipes to use all of our juicy tomatoes. Nothing compares to FRESH tomatoes!! This is one of our very favorite family recipes.

The citrus lemon dressing gives the salad a tangy, zippy flavor!

Perfect Summer salad

This salad is perfect to make in the summer with fresh tomatoes, corn and avocados. But you can also make it any time of they year using canned corn too!

Put your salad in the fridge overnight. You will be amazed at how the flavors get even better.

Make it for a BBQ

You can add chicken and it makes a wonderful dinner. Or make it for a summer party or BBQ. It will be gone in minutes!

Here’s the recipe for Tangy Corn, Avocado and Tomato Salad!

Tangy Corn, Avocado and Tomato Salad

Celebrate the bounties of summer with the perfect trifecta of corn, avocados and tomatoes! Creamy avocado, baby tomatoes and crunchy corn are covered in an zesty citrus lemon olive oil dressing. It's the perfect summertime salad - perfect for dinner or to take to a BBQ or potluck! 

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 10

Ingredients

  • 4 cups fresh or frozen sweet corn (fresh or cooked for 3-5 minutes)
  • 3-4 avocados
  • 4 cups cherry tomatoes or large tomatoes, diced
  • 1 cup green onions, chopped
  • 1 large pepper (diced) I used green peppers, but you can use red or yellow too

dressing

  • 4 T. Avocado oil
  • 1 T. lemon zest
  • 2 T. fresh lemon juice
  • 1/2 cup cilantro, chopped
  • 1/2 t. salt
  • 1/2 t. lemon pepper

Instructions

  1. Combine corn, avocado, tomatoes, green onions and peppers in a bowl.

  2. Mix the dressing ingredients in a small bowl. 

  3. Toss the dressing with the salad.

  4. Chill salad for 2 hours in the fridge. You can make this salad ahead and serve it the next day as well.
