The Most Delicious Easter Morning Brunch Casserole
I’ve been making Easter morning and Christmas morning casseroles for years.
I am always experimenting with recipes to perfect the best one. I love making a casserole either the night before Christmas or Easter or early that morning so that I can pop it in the oven and enjoy the time with my family instead of having to worry about getting breakfast ready during the festivities. Here is our favorite Easter morning casserole. I hope you might make it for YOUR family.

It also is perfect to make on the weekends – you don’t have to wait for a big holiday like Easter or Christmas to make it LOL! My kids were over last weekend and I made it for them and it received rave reviews.
The Most Delicious Easter Morning Brunch Casserole
This casserole is very hearty and looks beautiful on a brunch table. It has hashbrowns, bacon, eggs, and beautiful veggies.
Here’s the recipe for The Most Delicious Easter Morning Casserole:
- 8 eggs
- 1 pound bacon, cooked and crumbled
- 1/2 cup green onions, chopped
- 1/2 cup red or green peppers, chopped
- 1 cup asparagus tips
- 3 cups monterey jack cheese, shredded
- 2 cups milk
- 1 package (16-20 ounces) shredded hash browns, thawed
- salt and pepper
- Preheat oven to 375-degrees and spray casserole dish with cooking spray.
- In a large bowl, combine the eggs and milk, stir until combined.
- Add the rest of the ingredients and mix.
- Pour into your casserole dish and cover with aluminum foil.
- Bake 40 45 minutes, then take the foil off and continuing cooking for another 20-30 minutes or until the top of the casserole starts to brown.

Asparagus just says, “spring” doesn’t it? This is a lovely brunch casserole, and so easy to prepare. Easter mornings can be busy, so you don’t want to be trying to squeeze cooking in when you want to be dressing for church or watching the egg collection:) So many beautiful recipes here!
