Hey guys! I’m Kelsey from Poofy Cheeks back with another recipe and here at our house I love finding new ways to make our favorite foods. I like to take ingredients from our favorite dinners and rework them into something different. Doing this makes things easier on me but doesn’t make dinner seem like the same repetitive dish after another. Chicken Alfredo is one of the dishes my entire family of six likes. When there is a dish nobody complains about you take it an run with it (am I right or am I right!?) and so I bring you Chicken Alfredo Flatbread Pizza! You better believe these pizzas disappear like hot cakes with an easy homemade Alfredo sauce and melted mozzarella cheese.
Now before you turn your nose up at homemade Alfredo sauce let me just tell you it is really simple and takes less than 10 minutes to whip up. As a busy mom myself this is one step I don’t skip because it is just THAT good! I think it is what makes Alfredo dishes such a favorite in our home.
CHICKEN ALFREDO FLATBREAD PIZZA RECIPE
Ingredients:
- (1) 6 pack 8 inch Flatbreads
- 3 boneless, skinless chicken breasts
- 2 TBSP Olive Oil
- Garlic Salt
- 6 TBSP Butter
- 3/4 cups Parmesan Cheese (cheap stuff works fine for this)
- 1 TBSP minced garlic
- 1 1/2 cups of Heavy Whipping Cream
- 2 cups shredded mozzarella cheese
- Italian seasoning blend (optional)
Directions:
- Preheat oven to 350 degrees.
- Put olive oil in a large pan on medium heat. Cube chicken breasts and season with garlic salt. Add chicken breasts into the heated pan and cook stirring often until cooked through, 7-10 minutes.
- Remove chicken from pan and set aside. In the same pan add butter and cook on high until the butter is melted and starts to brown. Stirring frequently.
- Add minced garlic and half of the whipping cream (3/4 cup) to the butter. Boil it rapidly until it starts to thicken. Then reduce to medium and add half of the parmesan cheese.
- After the mixture has thickened add the other half of the whipping cream and parmesan cheese stirring constantly until heated through and then remove from the heat.
- Lay flatbread on a cookie sheet or pizza pan and spread Alfredo sauce around leaving about a half inch around the edges for the crust. Add desired amount of chicken and sprinkle with mozzarella cheese. Add a pinch of Italian seasoning blend and bake for 8-10 minutes.
**This recipe makes enough Alfredo for about 6-8 (8 inch) flatbread pizzas plus additional for dipping. If you are not making that many pizzas I suggest cutting the recipe in half or saving the remaining Alfredo to use on fettuccine noodles a few days later.
**If you are short on time you could always replace the homemade Alfredo with store bought but I haven’t found one that compares to this one – Just sayin’!
