Creamy Pumpkin and Sausage Slow Cooker Chili Recipe. Easy chili recipe with a spicy flavor and creamy texture of pumpkin. The pumpkin is a creamy surprize and the chili makes the whole house smell wonderful as it cooks. Garnish with cheese, sour cream and green onions or sliced jalapenos!
I love making soup in the fall and winter. And using a slow cooker makes it even easier. One of our favorites is a Pumpkin Chili that I have been making for years.
This year I thought I would change the recipe up a little with a few different types of beans as well as celery and corn. And now it’s even heartier and more delicious!
Here’s the recipe for our New and Improved Pumpkin Sausage Chili:
Creamy Pumpkin Sausage Slow Cooker Chili Recipe
- 2 pounds ground mild sausage
- 2 tablespoons minced garlic
- 1 large onion, diced
- 1 large green pepper, chopped
- 5 stalks celery, chopped
- 1 15-ounce can kidney beans
- 1 15-ounce can black beans
- 1 15-ounce can great northern beans
- 1 15-ounce can tomato sauce
- 2 14-ounce cans diced tomatoes
- 1 can corn
- 3 cups pumpkin puree
- 2 tablespoons chili powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon pepper
- heat a large skillet over medium heat and cook sausage and onion until sausage in no longer pink and onion is softened – about 7 minutes.
- Add the green pepper and cook 5 minutes more.
- While sausage is cooking, add all the cans of beans and corn to the crock pot. Also add tomato sauce and diced tomatoes, followed by the pumpkin puree. Then add the remaining spices – pumpkin pie seasoning, chili powder, cumin and salt and pepper. Mix well.
- When sausage mixture is cooked, add it to the slow cooker and mix well.
- Cook on low for 3-4 hours, or high for 1-2 hours.

And I am so excited!! I got a InstantPot this weekend and made my first recipe with it. I can’t wait to convert my slow cooker recipes over to InstantPot. I think it is going to save me so much time in the kitchen!

wanting to make that yummy chili today…not sure if you drain the liquid from the beans before adding to the crock pot?
