Three Ingredient Lemon Cheesecake Truffles!!

Hello Tatertots & Jello Readers!  It’s Laurie from Gallamore West and I’m so happy to be back here sharing one of my favorite recipes with you, Three Ingredient Lemon Cheesecake Truffles.  They are delicious and incredibly easy to make.  If you’re a fan of lemon, you’ll love these!
 

All you need is:
A bag of Lemon Oreos (yum!)
1/2 block of cream cheese, softened
Candy melts- 1 bag of white, 1/4 bag yellow
 
 
Have you tried Lemon Oreos yet?  They are delicious and remind me of my favorite Girl Scout cookies.
 
 
Pour your bag of Oreo cookies into your stand mixer or food processor, add the cream cheese, and mix until the cookies are all mixed in well with the cream cheese.  It will look like cookie dough.
 
 
Then roll the mixture into 1 inch balls and place them on a foil-lined cookie sheet.  Once you have a cookie sheet full of these balls made, pop your cookie sheet in the refrigerator or freezer while you’re melting your candy melts.  This keeps them from getting too soft and crumbly during the next step coming up.
 
 
Melt your white candy melts in the microwave, stopping to stir every 30 seconds, until melted.  Dip each ball into the white candy melts to coat.  Shake off excess on the side of the bowl and place ball back on the cookie sheet.  Repeat with all of the balls.  Then melt your yellow candy melts the same way, then transfer it to a pastry bag (or a plastic bag with a small corner cut off) to drizzle over the truffles.
 
 
Don’t worry about the excess yellow candy because when you take the truffles off of the cookie sheet, you can gently break off the excess, or use a butter knife to cut off the excess if needed.  Allow the candy melts to harden on your truffles (takes just a few minutes in the refrigerator) then package them up to deliver to someone special.  They will love them and never guess how quick and easy they were for you to make!

This recipe makes approximately 30 truffles.

    I made these for a pool party last week and they were pretty perfect. For my non lemon loving crew, I made them with mint oreos and dark chocolate ghiradelli melts. Yum!

    Yum! I just want to confirm that it’s only 1/2 a block of cream cheese? The picture shows a full block and it just seems like a 1/2 isn’t enough to moisten an entire bag of cookies – I’ll try it of course, but wanted to double check!!

      Hi Lisa! You’re right- the recipe shows a full block of cream cheese but as I made them I realized that 1/2 a block actually was the perfect amount of cream cheese to get the perfect consistency. Hope you love them as much as my family did! xoxo

    Who would buy girl scout cookies when you can easily make these? So beautiful. And lemon…major weakness of mine.

    So next time those girl scouts come knocking on my door, I think I’ll just hide. Or let my husband buy them but make him take them to work.
