Sweet and Crunchy No-Mayo Potato Salad
I think potato salad is the quintessential dish of summer! It can be a main dish by adding protein and it is the BEST summer side dish. Of course, a classic potato salad is so good, but there are times that a no-may potato salad is an even BETTER option. For example, for picnics in the heat, a traditional mayo salad doesn’t do well. Also, there are folks that don’t like mayo, can you even believe?? Take my brother-in-law, he has a draconian aversion to mayo. My sister and brother-in-law just moved nearby so I decided to make an alternative version of the beloved summertime potato salad. And I have to say – I might love this version even more than the traditional mayo-laden potato salad. I brought this mayo-free potato salad to our Fourth of July event and it was a HIT!!
Healthier Potato Salad Recipe
Taking the mayonnaise out of potato salad takes some calories out as well as fat grams. For example, a traditional mayonnaise potato salad has 19 grams of fat, this version has 14. The traditional version has 300 calories, this version has 240. It also feels lighter!
Ingredients Needed to Make Sweet and Crunchy No-Mayo Potato Salad
There are only a few ingredients needed to make this yummy no-mayo potato salad.
- 1.5- 2 Pounds of Potatoes. You can use any potatoes for this salad. I used fingerling potatoes.
- 1 Onion – I used a sweet Walla Wall onion, but you can also use a yellow or purple onion.
- White Wine Vinegar – this vinegar adds a sweet element to this potato salad and takes the bite out of the onions.
- Olive Oil – I used a lemon-flavor olive oil but you can get the same lemon flavor by using regular olive oil and squeezing the juice from 1/2 a lemon or 1 Tbs. of lemon juice.
- Lemon – see above.
- Salt and Pepper
- Herbs – I used dill and basil but you can use any herbs you want such as rosemary, thyme or parsley.
How to Make Sweet and Crunchy No-Mayo Potato Salad
- small potatoes, skin left on
- medium onion I used a sweet Walla Walla onion
- 1/2 cup white wine vinegar
- freshly squeezed lemon, or lemon juice
- salt
- olive oil
- dijon mustard
- pepper
- dill, fresh or dried chopped
- basil, chopped
How Long Will Sweet and Crunchy Salad Last?
One of the things I love most about this potato salad recipe is that it last for a long time! You can make it the day before and it’s even better. The vinaigrette soaks into the onions and potatoes as the salad sits in the fridge. I make a big batch of the salad and eat it all week. It will last in the fridge for at least 4 days. And you can freshen it up by adding more fresh herbs.

Ingredients
- 3 lbs. small potatoes, skin left on
- 1 medium onion I used a sweet Walla Walla onion
- 1/2 cup white wine vinegar
- 1 tsp salt
- 2 Tbs. salt (to boil potatoes)
- 1/2 cup olive oil
- 2 Tbs. freshly squeezed lemon, or lemon juice
- 2 tsp. dijon mustard
- 1/2 tsp pepper
- 1 Tbs. dill, fresh or dried chopped
- 2 Tbs. basil, chopped
Instructions

Wash potatoes and drain.

Put potatoes in a medium pot, add cold water to cover potatoes to 2 inches above the potatoes. Turn heat to high and let boil for 10-12 minutes for small potatoes. Increase boiling time if using larger potatoes. Check potatoes by putting a fork inside. If potatoes are soft on the inside, they are done.

Once soft, take potatoes off heat. Put a colander in the sink and drain the potatoes in the colander.

Put potatoes back in pot, pour vinegar over the potatoes while they are hot. The heat will let the potatoes absorb the vinegar while they are cooling.

While the potatoes are cooling, make the vinaigrette.
Potato Salad Vinaigrette

In a small add olive oil,lemon juice, salt and pepper and dijon mustard. Whisk to combine.

Once potatoes are cooled, cut them in half and add them to a medium serving bowl.

Add diced onions.

Pour vinaigrette over the top of the potatoes and onions. Stir to cover.

Sprinkle salt and pepper over the top.

Add herbs to the salad.

Stir to combine all the ingredients.

Serve at room temperature or chilled. Salad can be kept in the refrigerator for 4-5 days. It tastes even better the next day when all of the flavors have really combined. It's a great recipe to make the day before a dinner or party.
