Happy Father’s Day! In honor of Dads everywhere and Summertime,
this Dinner Dilemmas post is dedicated to grilling.
I never seem to want to cook when the weather gets hot. It’s so nice to grill something up and have it with a nice salad and some fruit. I am always on the lookout for new Summer recipes and marinates to try.
Here’s my favorite Grilling Recipe Right Now{It’s from Rachael Ray}:
And this is my favorite steak marinade:
- One 12-ounce jar orange marmalade, English if possible
- 1/2 cup red wine vinegar
- 1 Tablespoon chili powder
- 2 Tablespoons A1 steak sauce
- 1/2 cup ketchup
- 2 Tablespoons Dijon mustard
- 1 Tablespoon Worcestershire sauce
- 3 pounds steak
- Salt and freshly ground pepper, to taste

Grill chicken pieces till almost done.
While they are cooking, in a small bowl mix together 1/2 cup lemon juice, 1/4 cup soy sauce, a tbsp. minced garlic.
Baste chicken in sauce towards the end of cooking. The soy will burn if done from the beginning. Great alone or on top of salad greens, in roll ups, over rice or pasta, or in a quesadilla.

Here’s a tip from Tanya @ Miller Racing Family : In a charcoal grill— take a metal coffee can and snip holes around the bottom of the can. Place the can in the BBQ grill. Then place your charcoal in the can, pour on the starter and light the fire. If you give it a 15 minutes it gets the coals really hot. Then lift the can out of the grill and add more coals and then it is time to grill. I think it speeds up the charcoal grilling process.
Bethany @ The Paper Pony sent in her favorite grilling recipe for Teriyaki Chicken:
Marinate boneless skinless chicken breast cutlets in teriyaki sauce for a few hours. Grill them along side pineapple rings. If the cutlets are thin, they will be done about the same time. Right before the chicken is done, throw some thin, shaved ham on the grill, baste the chicken in teriyaki sauce and then place the ham on top of the chicken. Top all of that with a slice of swiss cheese. When the cheese is melted, put a pineapple ring on top of the chicken/ham/cheese and serve it all in a toasted hamburger bun… delish!

All that grilled stuff sounds so yummy! I wish we grilled more…but sometimes it is just way too hot to even fire up the grill:) I have been wanting to do shish kabobs though!

Jen, we grilled some fabulous lamb sliders last night. We bought the ground lamb at farmers market. I made them small so that they would fit nicely on a roll, rather than a bun. Then I made a tzatziki sauce, so good. We put the sliders on the bun, some fresh greens (also from the market) and then topped it with the tzatziki sauce. They were wonderful and disappeared quickly!

I grilled out tonight for Father's day too. We had steak, salad, french bread to dip into a spinach/artichoke dip, green beans, and sweet tea! I also made Michael's favorite mashed potatoes, but when adding salt, the lid came off and added the whole container of salt….Yuck! We ate outside…So nice!
