One of my favorite parts of Summer is the fresh fruits and vegetables. We’ve had a square foot garden and I love going out there and gathering fresh ingredients. I can’t wait to build a new one at our new home this coming spring! So when I spied some beautiful peaches, nectarines and blueberries at the farmer’s market I snapped them up.
- 5-6 cups or ripe peaches or nectarines, sliced. If using peaches, peel the peaches.
- 2 cups of blueberries
- 1/2 cup water
- 3 Tablespoons Lemon Juice
- 1 box Cake Mix (white or yellow is what I usually use)
- 1 stick of butter, chilled (you can use half a stick if you are watching calories)
- 1/4 cup sugar (to sprinkle on top)
- Preheat your oven to 350 degrees
- Put fruit at the bottom of your pan. I usually use a 9×12 casserole dish
- Then mix in the water and lemon juice.
- Pour the cake mix over the top and stir the mix into the fruit.
- Then take the chilled butter and slice off small pieces on top of the cake and fruit mixture.
- Sprinkle sugar over the top and pop it into the oven.
- Bake for 30-45 minutes, depending on the size of your pan. It will be done when the mixture is bubbling and brown on top.
- Serve with ice cream!
- Bask in the adoration of your family!
Here’s a SUPER easy recipe you can seriously put together in a few minutes flat and it only takes a few ingredients. My kids can’t get enough of this dessert. I have made it with blueberries and either peaches or nectarines. Either way it’s yummy!

I sprinkled sugar to lightly cover the top of the mixture – about 1/4 of a cup. It carmelizes on top and adds a little bit of a crunchy texture 🙂

Wish you’d posted this recipe last week! LOL I made a cobbler to take to a friend’s house on Sunday night and it was blech. The topping wasn’t good, and the topping is what totally makes it for me with a cobbler. Good thing there was homemade vanilla ice cream to make up for it, but next time I’m using this recipe!

Posted earlier that I wondered where the butter was used. As I looked at the photo, it appears that the butter is shaved, or cut into pieces and placed on top of the cake mix. I think I have solved the mystery. Thanks so much for sharing! Looks yummy!

Yes! That’s right, you slice off the chilled butter onto the top of the cake mixture right before you pop it into the oven.
