******************GIVEAWAY CLOSED*********************{{{Happy Monday}}}
I hope everyone had a wonderful Thanksgiving Holiday!
We had so much fun with our family.
I came home to a schizophrenic house — half of it is Christmas, half is Thanksgiving. I am excited to get all of my Christmas things out and make it all festive this week. In the meantime, I have a family Holiday Treat to share with you!!
If you know me, you will know that I am not a big baker. But I do like to make cute holiday treats. This is a FUN recipe your kids can help with. It’s easy, it’s fast and it’s festive!
Peppermint Whoopie Pies
Plus, you use a cake mix — so it’s super fast!! Your kids will love making these holiday treats with you. And, I know I have mentioned that I am a moderator at the International Delight forum. It’s a great place to connect and share with other people. I don’t drink coffee myself, but I used some of the International Delight Peppermint Mocha in this recipe and it is DELIGHTFUL.
Mix
- 1 boxed cake mix.
- 3 eggs
- 1/2 cup water
- 1/2 cup oil
- 1/3 cup Mocha Peppermint International Delight Creamer
Filling
- 1 1/2 sticks unsalted butter, softened
- 1 1/3 cups marshmallow fluff
- 3/4 cup powdered sugar
- 2 oz cream cheese, softened
- 1 tsp. vanilla
- 1/4 tsp, salt
- 1/2 tsp. peppermint oil
Directions:
Mix all ingredients together. Use a spoon to put 2 inch balls on a baking sheet, lined with parchment paper.
Be sure to use parchment paper.
Look at the difference between cookies baked with parchment paper and those on a plain cookie sheet!
Bake at 400-degrees for 8-10 minutes until the center of the cookie can be pricked with a toothpick and come out clean. Let cool on a wire rack.
Make the Filling. Fill the center of the cookies with the filling and then roll them in the crushed peppermints or sprinkles.
{can you see that half of the lights in my tree aren’t working??? LOL}
Now for the fun stuff!! Crush up the peppermints in your food processor. If you don’t have one, put them in a Ziploc and pound them with a glass or rolling pin. Ella and Hannah love doing this!
I also made a printable you can use and leave out on Christmas Eve!!
You can print this printable on scrapbook paper in your printer and any background will come through.
Here’s a link to the Cookies For Santa Printable.
You can take an old jar and add the printable to it to leave out for Santa.
You can make a couple of holes on each side of the Santa printable and then thread some baker’s twine through. {I got my baker’s twine from Twisted Sugar Twine}
So now you have an easy cookie that’s perfect for cookie exchanges, parties or the big night before Christmas!!
And guess what?? You can win a $200 Walmart gift card!!
