Greek Pasta Salad

Hi, it’s Laurie from Gallamore West and I’m so excited to be here at Tatertots & Jello today.  I have a new favorite recipe to share with you, Greek Pasta Salad.
 
I’ve been making my husband’s lunch to bring to work every day for over a month now {that’s a record for sure here!} so I wanted to switch things up a little and send something a bit more exciting than just another sandwich so I came up with this dish that he loved so much that he texted me and asked, 
 
“Did you MAKE that?  It was professional.”  

 
 
And yes, I did make it.  And it took about 10 minutes.  And it actually gets better the 2nd day after the ingredients have had time to blend together while it’s in the refrigerator so it’s a perfect make-ahead dish too!
 
 
 
Ingredients:
12 oz. penne pasta
4 roma tomatoes
2 cucumbers
6 oz. crumbled feta cheese
salt & pepper to taste
balsamic vinegar to drizzle
 
Here’s how to make it:
 
Boil pasta until cooked al dente.  While pasta is boiling, slice cucumbers and tomatoes into a medium bowl.  Add in feta cheese and toss to mix well.  Set aside.  Once pasta is cooked, drain it and cool it in the refrigerator for about 5-10 minutes, stirring a few times to cool it almost thoroughly.  Pour pasta into large bowl and stir veggie/cheese mix into it.  Add in salt and pepper to taste.  When ready to serve, drizzle with balsamic vinegar.  My favorite is this one from Trader Joe’s.

Greek Pasta Salad
