Happy Holidays: Peppermint Brownie Cake Pops

Hi everyone! I am Shannah from the blog, Just Us Four. I’m so excited to be sharing a recipe with you that is perfect for the upcoming Christmas holiday. These peppermint brownie cake pops are so delicious and really easy to make. They are the perfect Starbucks copycat too.

Peppermint Brownie Cake Pops

Peppermint Brownie Cake Pops

These little cake pops are perfect for kids. They also make fantastic gifts.

Peppermint Brownie Cake Pops:

1 box brownie mix
4 oz cream cheese, softened
2 cups white chocolate chips
2 tsp vegetable oil
crushed peppermint pieces

Let’s Make It:

1) Preheat oven to 350 degrees. Prepare brownies according to directions for fudgy brownies. Let cool completely.

2) Remove brownies from pan and discard the edges. Mix together with softened cream cheese. Using a cookie dough scoop, scoop into balls and roll with hands. Place on parchment lined baking sheet.

3) Combine chocolate chips and vegetable oil in a bowl. Microwave for 45 seconds. Stir until smooth. If needed, microwave in additional 10 seconds until fully melted. Dip brownie pieces into white chocolate. Sprinkle with crushed peppermint pieces. Let set until chocolate is set.

These little brownie cake pops are so perfect for Christmas…or anytime of the year.
