Pumpkin White Bean Turkey Chili is the perfect Fall meal. Based on an award winning pumpkin chili that I've made for years, this version takes a fraction of the time because it's made in the Instant Pot! Made with pumpkin puree, ground turkey, white beans, corn, green chiles and zesty spices, we top it with sour cream, green onions and avocado. It is also amazing serves with a baguette or crispy tortilla chips.
Set Instant Pot to saute. Then add olive oil and ground turkey. Cook the turkey until it starts to cook through and becomes crumbly, about 5 minutes, stirring constantly.
Add chopped red onions, garlic, chile powder, cumin, oregano, and cook through until turkey is all the way cooked.
Unplug Instant Pot. Add pumpkin, chicken stock, beans, corn, green chiles, and crushed tomatoes. Stir. Set Instant Pot to "soup" setting and set timer for 25 minutes. Make sure the pressure vents are closed. Natural release.
Remove lid and check taste. Adjust taste to liking with salt and paper and/or adding more seasonings. Garnish with sour cream, chopped green onions and/or avocado slices. Enjoy!
