Tangy Corn, Avocado and Tomato Salad

Celebrate the bounties of summer with the perfect trifecta of corn, avocados and tomatoes! Creamy avocado, baby tomatoes and crunchy corn are covered in an zesty citrus lemon olive oil dressing. It's the perfect summertime salad - perfect for dinner or to take to a BBQ or potluck!

Ingredients

  • 4 cups fresh or frozen sweet corn (fresh or cooked for 3-5 minutes)
  • 3-4 avocados
  • 4 cups cherry tomatoes or large tomatoes, diced
  • 1 cup green onions, chopped
  • 1 large pepper (diced) I used green peppers, but you can use red or yellow too

dressing

  • 4 T. Avocado oil
  • 1 T. lemon zest
  • 2 T. fresh lemon juice
  • 1/2 cup cilantro, chopped
  • 1/2 t. salt
  • 1/2 t. lemon pepper

Instructions

  1. Combine corn, avocado, tomatoes, green onions and peppers in a bowl.

  2. Mix the dressing ingredients in a small bowl. 

  3. Toss the dressing with the salad.

  4. Chill salad for 2 hours in the fridge. You can make this salad ahead and serve it the next day as well.
