Low Carb Cheesy Taco Bake - Keto. A cheesy keto taco casserole that is the perfect topping over salads for you and over chips for your kids! All of the taste of tacos with a fractions of the carbs!
1. In a large skillet, brown ground beef (or chicken or turkey), yellow onion and peppers. Until meat is cooked through.
2. Add taco seasoning and mix until incorporated.
3. Put beef mixture at the bottom of a casserole dish and spread out evenly.
4. Add ricotta cheese. Place scoops evenly on top of beef mixture.
5. In a small bowl, combine 4 eggs and half of cheese and mix.
6. Pour egg + cheese mixture over the top of the ricotta scoops and smooth it evenly so it covers all of the beef mixture.
7. Add sliced jalapeno over the egg and cheese mixture.
8. Layer the remaining cheese over the jalapenos.
9. Bake at 350-degrees for 25 minutes, or until cheese melts and mixture is bubbling.
10. Serve over mixed green or nacho chips (for non-keto). Top with sour cream, salsa and/or cilantro)
