Bacon-Wrapped Green Bean Bundles

Bacon-Wrapped Green Bean Bundles. The perfect side dish for Thanksgiving or any holiday, these delicate green beans are layered with a garlic glaze and wrapped in crispy bacon with a chive bow.

Ingredients

  • 1 pound fresh green beans
  • 6-7 slices uncooked bacon
  • 1/4 cup shredded parmesan cheese
  • 12 pieces fresh chives, uncut

butter glaze

  • 1/4 cup butter, melted
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon Italian seasoning
  • 1/2 teaspoon garlic salt (to taste - if you love garlic, add more)

Instructions

  1. Preheat oven to 400-degrees

  2. Put bacon slices on parchment paper baking sheet and bake for 7 minutes.

  3. While bacon is cooking, cut ends of green beans.

  4. Fill a large pot with hot water and a pinch of salt. Put pot on stove and let it come to a boil.

  5. Once water is boiling, add green beans and cook for 2 minutes.

  6. While beans cook, fill a large bowl with water and add ice.

  7. As soon as beans have been cooking for 2 minutes, take them off the stove, drain and immediately add to ice water to stop cooking process.

  8. After beans have cooled, take them out of the pot and onto a clean dishtowel or paper towels and blot until fairly dry.

  9. Make glaze - melt butter, add pepper, garlic salt and Italian seasoning. Whisk to combine.

  10. Put beans back in the large bowl and pour the glaze over the top. Use a wooden spoon to stir the beans around so the glaze evenly coats the beans.

  11. Put a piece of parchment paper on another baking sheet. Place one piece of bacon on the baking sheet. Put 10-12 green beans in the center of the bacon and wrap the bacon around the beans. Use a long piece of chive to wrap around the bacon and tie in a knot at the top. Do this to all pieces of bacon - you will have 6-7 bundles of beans.

  12. Put the baking sheet with green bundles in the oven and bake for 7 minutes.

  13. After 7 minutes, take the baking sheet out and transfer the bundles to a serving tray and serve immediately.

Recipe Notes

TIP - If you want to make these green bean bundles the night before, do all the steps in the recipe until you get to the part where you bake the green bean bundles. Once you have the green bean bundles wrapped, you can put a piece of plastic wrap over the top and pop them in the fridge. Then take them out about half an hour before you want to eat. Increase the bake time from 7 minutes to 12 to accommodate the colder temperature of the green bean bundles.
