Chaffle BLT Sandwiches with Herb Mayo. Nothing's better in the summer than a fresh BLT. Stay on track with this low-carb, keto-friendly BLT!
In a medium bowl, mix eggs, cheese and almond flour until combined.
Heat up waffle iron, add chaffle mixture. Close lid and let cook until the light tells you the waffles are done, about 3 minutes.
Make Herb Mayo -- combine mayo, pepper and herbs.
Add 1/2 Tsp. of mayo to the underside of one chaffle.
Layer lettuce, tomatoes and 2 pieces of bacon (one slice of bacon cut in half). Repeat another layer of ingredients.
Add 1/2 Tbsp. of mayo to the underside of nother chaffle and put it mayo-side down on top of the toppings to complete the sandwich. Enjoy!
