Easy Red, White, and Blue Truffles

It’s Laurie from Gallamore West, and I’m so excited that my favorite holiday is quickly approaching! The 4th of July has been my favorite holiday since I was a little girl because I love the fireworks, the BBQ, the get-togethers, and of course, the desserts! I always make a bunch of desserts on the 4th of July and this year I’m making one of my favorites to share with you- Easy Red, White and Blue Truffles.

Here’s the recipe:

Easy Red, White and Blue Truffles

1 bag of Golden Oreos

1/2 block of cream cheese, softened

1 package of Wilton white chocolate candy melts

Red, white and blue sprinkles

Finely crush the cookies in a food processor. If you don’t have a food processor you can crush them in a large Ziploc bag with a rolling pin. In a stand mixer, combine crushed cookies with softened cream cheese until well combined. Roll truffle mixture into 1-inch balls and place them on a greased cookie sheet. Once you’ve rolled out all of your truffles, pop the cookie sheet in the freezer while you melt your white candy melts. Pull the truffles out of the freezer and gently dip each truffle, one at a time, into your melted white candy melts and gently tap off the excess white chocolate onto the side of the bowl before placing your truffle back onto the cookie sheet. Immediately top with sprinkles.

I love these Easy Red, White and Blue Truffles because they are so delicious and incredibly easy! Plus you can pretty much switch them up for any occasion. Here are some Lemon Cheesecake Truffles I made last year and shared here at Tatertots & Jello.

I’ve also made these Candy Corn Truffles, and these Chocolate Peanut Butter Truffles too!

Patriotic Red Velvet Cookies with Cream Cheese Frosting

Hello Tatertots & Jello Readers! It’s Laurie from Gallamore West and I’m so excited to be here again sharing another sweet recipe with you all this month.

Is it me or is this time of year just crazy busy with parties, celebrations, school ending, and more? It seems like every time I turn around I’m getting a dessert ready for another celebration, so I’m always searching for desserts that are simple, delicious, and quick but still adorable. I may be biased, but I definitely think that my Patriotic Red Velvet Cookies with Cream Cheese Frosting fall in that “Simple, Delicious, Quick, Adorable” category. Do you agree?

They are so simple to make because the cookies are made with a boxed cake mix, so the dough comes together so quickly with only three ingredients- the cake mix, 2 eggs, and oil. And did you know that you can make cookies from ANY boxed cake mix with just those three ingredients? The cookie making possibilities are endless with that little secret!

Just mix all three ingredients together in a bowl… I don’t even whip out my mixer for this cookie dough, which is crazy because I generally use my mixer for everything. Your cookie dough will look shiny and definitely thicker than a cake mix. Roll into 1 inch balls and place on lightly greased cookie sheet. Bake for 8-10 minutes at 350 degrees. Cool completely before frosting.

And speaking of frosting, YUM! I have a new “secret ingredient” that takes my easy buttercream frosting from delicious to A-M-A-Z-I-N-G… it’s coffee creamer instead of milk. If you haven’t tried it, definitely give it a try. So far I’ve only tried it with French Vanilla creamer and I can’t wait to experiment with more flavors soon.

For the frosting I used 1/2 block cream cheese {just slightly softened}, 2 1/2 cups of powdered sugar, 1 teaspoon vanilla extract, and 3 tablespoons French Vanilla Coffee Mate creamer.

These Red Velvet cookies are delicious straight out of the oven because they have a slight crunch on the outside, but remain chewy inside.

But that French Vanilla Cream Cheese Frosting really puts these cookies over the top for me. I hope you enjoy them, and I hope you have a great start to your summer too! xoxo
