I’ve been making Easter morning and Christmas morning casseroles for years.

I am always experimenting with recipes to perfect the best one. I love making a casserole either the night before Christmas or Easter or early that morning so that I can pop it in the oven and enjoy the time with my family instead of having to worry about getting breakfast ready during the festivities. The Most Delicious Easter Morning Casserole. This hearty and beautiful casserole can be made the night before and popped into the oven on Easter or Christmas morning and cooks while you enjoy time with your family.

Ingredients

8 eggs
1 pound bacon, cooked and crumbled
1/2 cup green onions, chopped
1/2 cup red or green peppers, chopped
1 cup asparagus tips
3 cups monterey jack cheese, shredded
2 cups milk
1 package (16-20 ounces) shredded hash browns, thawed
salt and pepper

Instructions

Preheat oven to 375-degrees and spray casserole dish with cooking spray.
In a large bowl, combine the eggs and milk, stir until combined.
Add the rest of the ingredients and mix.
Pour into your casserole dish and cover with aluminum foil.
Bake 40 45 minutes, then take the foil off and continuing cooking for another 20-30 minutes or until the top of the casserole starts to brown.
