Early Holiday Inspiration

Hi friends! How was your week? Can you believe that it’s almost November?? This year has flown by. This week I’m sharing some easy ways to get ready for Thanksgiving and Christmas! The holidays are even more enjoyable when you are organized and have everything planned out ahead of time. You are going to LOVE these ideas that will save you time!

New Projects

This week I shared the easiest fall dinner idea.

This is the easiest fall dinner idea — Zucchette Pasta Bake. Full directions below

Did you know zucchette means small pumpkins? @traderjoes has this cute pumpkin-shaped butternut pasta right now. They also have a yummy autumnal havest creamy pasta sauce. And don’t worry if you aren’t a big squash or pumpkin-flavor fan, the flavor is so subtle and delicious! My kids loved it! Here’s how to make this easy dinner idea

Ingredients:

Traders Joe’s Zucchette pasta
Trader Joe’s autumnal harvest pasta sauce
1/2 cup Parmesan cheese
1 cup shredded Colby Jack cheese

cook pasta in boiling water until al dente

pour pasta into a baking dish with a little olive oil on the bottom.

sprinkle pasta with Parmesan cheese.

pour pasta sauce over the top. I also added about 1/4 cup of water to the bottle and swirled it around to get all of the pasta sauce and poured the water over the top.

sprinkle shredded Colby Jack cheese over the top.

cook in a 35-degree oven until cheese is melted.

sprinkle with fresh basil (optional but so yummy)

enjoy!!

A New Adventure

I also started a new adventure as a real estate agent with an amazing Avenues business – City Home Collective! I spent a long time considering who I wanted to work with and I felt such a strong draw to City Home. City Home Collective approaches helping people find and sell their homes with such compassion and heart. They value relationships over transactions.

These little cake pops are perfect for kids. They also make fantastic gifts.

Peppermint Brownie Cake Pops:

1 box brownie mix
4 oz cream cheese, softened
2 cups white chocolate chips
2 tsp vegetable oil
crushed peppermint pieces

Let’s Make It:

1) Preheat oven to 350 degrees. Prepare brownies according to directions for fudgy brownies. Let cool completely.

2) Remove brownies from pan and discard the edges. Mix together with softened cream cheese. Using a cookie dough scoop, scoop into balls and roll with hands. Place on parchment lined baking sheet.

3) Combine chocolate chips and vegetable oil in a bowl. Microwave for 45 seconds. Stir until smooth. If needed, microwave in additional 10 seconds until fully melted. Dip brownie pieces into white chocolate. Sprinkle with crushed peppermint pieces. Let set until chocolate is set.

These little brownie cake pops are so perfect for Christmas…or anytime of the year.

Years ago I used to have a big cookie baking day where my brother and sister would come over and we would make all sorts of cookies and candies for Christmas. Then I had kids and more kids until I had four kids. Now with four kids ages 7-1 I stick with a batch of cookies or candy here and there. Everything I do has to be quick because their attention span is short and trying to cook with them wears on my patience if you know what I mean. This toffee is super quick and easy so it wins the mom approved award.

Graham Cracker Toffee Recipe

Ingredients:

• 1 sleeve of cinnamon graham crackers
• 1 cup butter
• 1 cup packed brown sugar
• 2 cups semisweet chocolate chips
• 3/4 cup chopped pecans (optional)

Directions:

• Preheat oven to 400 degrees.
• Line a baking sheet with parchment paper or foil and tightly fill the pan with graham cracker squares. If some break or aren’t perfect don’t worry about it. You won’t be able to notice in the end.
• In a saucepan melt the butter and brown sugar. Bring mixture to a boil and allow to boil for three minutes. Immediately pour mixture over crackers using a spatula to spread it around evenly.
• Bake for 5-6 minutes. It will be bubbly which is fine. Spread chocolate chips across the top and once again use a spatula to spread evenly as they melt. Sprinkle with pecans.
• Allow toffee to completely cool for a few hours or overnight. Speed up the process by placing the pan in the refrigerator. Cut into small pieces and enjoy!

The first time I participated in Jen’s event a couple years ago I shared my mom’s classic fudge with a twist – dark chocolate & pistachios. It was delicious. My mom was known for her fudge & friends & family would start putting in their “orders” for a tray of it once fall arrived. We would make huge batches of fudge every year & spread the joy. It was heaven with all that fudge overflowing everywhere. Trays & trays all over the place. People were so excited when we would show up with their delivery. I completely understand why, it’s AMAZING. I am fortunate that she made sure I had the recipe perfected early on so that I can now pass this tradition down. Only now instead of making it all myself & setting out on deliveries, I can just share the recipes on my blog, Kleinworth & Co..

For this recipe I chose our simple white chocolate fudge. Then I topped it with holiday colored sixlets that I found in the bulk section of my local store. Of course I bought about 2 lbs of them because they are so cute sprinkled on everything this time of year. Can’t you just see the delight in the eyes of those who get a plate of this? I’m so excited to add this to my gift list for my neighbors.

White Chocolate Holiday Fudge

Ingredients

2 cups white chocolate chips
6 oz sweetened condensed milk
1-2 cups holiday sixlets

Directions

Line an 8×8 dish with parchment paper & spritz lightly with cooking spray
In a medium glass bowl, combine the chocolate chips & the sweetened condensed milk
Microwave on 50% heat in 30 second intervals until fully melted & combined- be sure to stir well in-between each interval.
Transfer melted mixture into prepared pan
Sprinkle on your sixlets & press in slightly
Refrigerate for at least 4-6 hours to set or freeze 2-4 (allow to thaw 30 min before cutting)

That’s it! Isn’t that so simple? You definitely have to make this for all your holiday gatherings this year!

It really is so simple & what a crowd pleaser too. Chocolate, oreos & a hint of peppermint. Absolutely delightful. My family LOVES Oreos. It’s the one cookie we don’t make at home & is always bought in bulk. I love incorporating them into recipes or just having one when we are craving a little something sweet. This holiday variety of the Candy Cane mini’s was a must have & they worked great for this chocolate pie.

The white chocolate drizzle on top is completely optional. You could add whipped cream instead. I decided on the white chocolate because I wasn’t sure how quickly we would get to enjoy this pie. It’s great when you need to make ahead & stores well in the freezer for a couple days. If you want to add whipped cream – it’s best to do so right at serving time.

Ingredients

27-30 Regular or double stuffed Oreos (regular size)
1/2 cup butter (1 stick) – melted
1-1/2 cups heavy whipping cream
2 cups semi-sweet chocolate chips
1/4 cup granulated sugar
2 eggs
1 tsp peppermint extract
1/4 tsp salt
1/2 cup Candy Cane Mini Oreos for topping
1/4 cup white chocolate candy melts

To make:

Place regular size Oreos in food processor & grind to crumbs
Transfer to medium bowl & add melted butter – mix with a fork until all crumbs are moist
Transfer to pie plate & press flat & up sides to make crust
Place crust in freezer until ready to use
Place chocolate chips, sugar, eggs, peppermint extract & salt in blender- set aside
In small saucepan heat heavy cream to a simmer- do not boil
Pour over ingredients in blender & blend on high for 30-60 seconds
Pour into prepared Oreo pie crust from freezer
Top with Candy Cane Mini Oreos
Melt white chocolate candy melts by placing in a small squeeze bottle & setting in hot water until melted
Once melted – squeeze over pie in desired pattern
Place pie in refrigerator for a minimum of 2 hours to firm (I like to leave mine overnight or freeze for 2-3 hours)
