Corned Beef wasn’t a dish I grew up eating. But my husband’s family LOVED it and his mom made it all the time! So when corned beef was on sale at the grocery store for St. Patrick’s Day, I picked some up, along with cabbage and decided to give it a try! Of course after researching about it and seeing how LONG it traditionally takes to make – cook for NINE TO TEN HOURS in the crockpot??? I decided to give it a try in my trusty Instant Pot.

Seriously, what did I do before this baby came into my life?? Of course I still love my slow cooker to make food while I am away (yes I have seen This Is Us) and it is magically done when I get home. But for quick, easy dinners I LOVE our Instant Pot. It saves me SO much time. And as a mom of four (now five), I am constantly multi-tasking and anything that saves me time is my new best friend.

So – as I was saying I made Corned Beef, Cabbage AND Mashed Potatoes in my Instant Pot. And all in the same pot – yes, it’s true! It’s really NOT hard. If I can do it, so can you!

All I did was I put 2 cups of beef broth (you can use chicken if you want too) in the bottom of my Instant Pot (inner cooking pot), then I cut a BIG onion into quarters and put that at the bottom of the pot, along with garlic cloves. I then rinsed off the corned beef and laid it, fat side up, on top of the onion and in the broth. The corned beef comes with a seasoning packet. I sprinkled the seasoning on top of the corned beef. Then I locked the lid in place and set my instant pot (mine is a cheap knock off actually but it works) to the highest heat setting for NINETY minutes and let it go.

When the time was up I quick released the heat because it was getting late, but you can also let the pressure subside naturally and then open the lid. The meat was HOT. Be careful. I took the meat out and put it on a baking sheet and covered it with tin foil to keep it hot.

At the bottom of the pot there is still a lot of liquid, the onions have boiled down. I diced up about 8 red potatoes and put the in that broth. Then I quartered a cabbage and put the pieces on top of the potatoes. They are on top of the broth but it’s fine because the Instant Pot will keep everything very wet. I put the lid back on and set the pressure to high again and the time to FIVE minutes.

After five minutes I again manually released the pressure, but you can also let it naturally release. I was just in a hurry. I took the lid off and then took the cabbage out and put it on the baking pan next to the corned beef and put the tin foil over it. Then I drained the rest of the liquid, leaving the potatoes and onions. I then got my hand mixer out and whipped the potatoes right in the Instant Pot container, along with 4 tablespoons of butter and 1/2 cup milk until they were fluffy. And you can totally serve the cooked potatoes without whipping them if your family prefers them that way.

Then I put the corned beef, cabbage and potatoes on a platter and we ate! Oh, by the way, the white on the corned beef are the onion and garlic pieces that were cooked in the broth – they give the corned beef a really beautiful flavor!

It was really good! My kids had never had corned beef before and were a little wary about the color (bright pink) of the meat but they all agreed at the end that it was REALLY good! It’s something I will make again. They even liked the cabbage! Also – the recipe made about twice as many potatoes as in the picture. I just didn’t have room on the platter for all of them. Leftovers!!

Corned Beef, Cabbage and Mashed Potatoes all in the Instant Pot - SO much faster and even more tender than cooking it in the oven! 

Course dinner

Prep Time 5 minutes minutes

Cook Time 1 hour hour 35 minutes minutes

Total Time 1 hour hour 40 minutes minutes

Servings 6

Ingredients

• 1 2-3 lb. Corned Beef Brisket
• 1 large Onion, quartered
• 4 cloves garlic, whole
• 2 cups Chicken or Beef Stock
• 10 small Red Potatoes, diced
• 1 head Cabbage, quartered
• 4 Tbs. butter
• 1/2 cup milk

Instructions

• Add quartered onion to the bottom of the pot. 
  
• Put corned beef brisket on top of onions, fat side up. And sprinkle with included seasoning mix. 
  
• Lock Instant Pot lid and set pressure to highest pressure and timer to 90 minutes. 
  
• Let pressure naturally release or you can do a quick release. 
• Take brisket out of pot and put on a baking sheet, cover it with tin foil. 
• Add potatoes to broth in the pot. 
  
• Then put the cabbage pieces on top of the potatoes
• Set Instant Pot back to highest temperature and timer for 5 minutes. 
• After timer is done, let pressure naturally release or manually release the pressure
• Take cabbage out of pot and put on baking sheet with the corned beef. Cover both with tin foil. 
• Drain remaining broth and whip potatoes. Add butter and milk. 
  

Overall a big win for mom! Yay! Give it a try. It’s SO much faster making it in the Instant Pot than cooking it in the crockpot or stove. Let me know what you think!

Plus mashed potatoes take awhile to cook on the stove. My kids ask for mashed potatoes all the time for dinner and they take so long to make that we usually only had mashed potatoes on holidays or sundays when there was more time to prepare them.

That changed when I got my Instant Pot. Now we can make mashed potatoes all the time. My girls know how to make them themselves anytime they want! Here is the recipe for the most delicious, fluffiest, creamiest mashed potatoes in just 15 minutes in your Instant Pot. Give it a try!!

We are excited to make up a couple batches of these potatoes for Thanksgiving! You can cover them with tinfoil and keep them warm in the oven if you want to make a couple of batches to serve a large crowd!

Here are 10 must-have accessories to make dinner a breeze with your Instant Pot.

The Instant Pot Lid is a tempered glass lid that looks similar to the lid you’d see on a slow cooker. It allows you to put your Instant Pot out in your serving area and keep the pot covered when people aren’t using it, without having to manage the bulky pressure lid.

The Instant Pot Silicone Lid is perfect for covering up your leftovers and saving them in the fridge. You can pull them right back out and warm them up in your Instant Pot.

If you’re looking to make multiple dishes and don’t have time for the cleanup in between, it may not be necessary to purchase a second Instant Pot. Buy an extra stainless steel insert to have on hand.

10 must-have accessories for your instant pot

It’s great to have an extra sealing ring or two on hand when cooking multiple things in one day. The rings can get a little smelly and need to be deep cleaned. In addition they will wear out fairly quickly if you’re using your Instant Pot frequently. And who doesn’t?!

Not only are the Instant Pot Mini Mitts absolutely adorable, but they’re great for grabbing the stainless steel insert out of the pot while it’s still hot so that you can set it on a trivet or clean it out.

Steam veggies and contain other items in a stainless steel strainer, rather than a steaming basket. It will hold more items and all you have to do is quickly remove the handles!

10 must-have accessories for your instant pot

It’s easy to make cheesecake and other desserts in the Instant Pot. Invest in smaller springform pans (my favorite are Wilton’s Mini Springform Pans) or a pan with a removable bottom like Fat Daddios’ 7” Pan with a Removable bottom.

Silicone baking cups are great for dessert items, like cupcakes or cake, but they also are great for those wishing to cook smaller servings.

Looking to place multiple small items in the Instant Pot like springform pans or silicone baking cups? Invest in stainless steel trivets. The varied heights will allow for easy stacking within the pan. They can also keep food items up out of the water if you’re using water in the bottom of the pot.

These elastic bands are great for putting around bottles, pans or using as a sling to remove hot items from the Instant Pot.

I LOVE cilantro! And one of my cravings is the Cafe Rio Cilantro Rice at their restaurants. So when I threw a birthday party for my two oldest kids with burrito bowls I knew I wanted to try making cilantro rice to go along with dinner.

I’ve had such a fun time experimenting with recipes in our Instant Pot, it was a fun challenge to make this recipe in the pressure cooker!

I made this recipes a few times, tweaking it until it was just right.

The thing that makes this recipe SO good is a few unexpected ingredients like butter, chicken bouillon and green chilis. It is delicious and SO easy to make.

It only cooks for 6 minutes in the Instant Pot. So it is a wonderful dish to make while you are getting things ready to serve dinner.

I also made burrito bowls and chocolate mousse cheesecake the day I made this rice — AND they were all made in the Instant Pot. Confused as to how I did this? It’s all in the timing and preparation. I made the Chocolate Mousse Cheesecakes the night before and then put them in the fridge. They need to be refrigerated for at least 4 hours before serving so that worked out great. I made the Tomatillo Carnitas meat that morning and then I warmed it up in the microwave right before we ate. And I made the Instant Pot Cafe Rio Cilantro Lime Rice right before we ate so it would be PIPING hot. YUM!

Pressure Cooker Instant Pot Tex-Mex Soup 

Welcome to another Pressure Cooker Instant Pot recipe. I’m having such a fun time experimenting with our pressure cooker. I’ve made all kinds of recipes in it. I love this new series. And I have LOVED hearing about all of the YUMMY things that people are making in their pressure cooker/instant pots! Pressure cookers really do save our family so much time during the week. And the new pressure cookers are less scary than the ones that my mom used. Such a wonderful invention.

In the winter my body goes into hibernation mode. I want comfort foods. My favorite thing to make during the winter months is soup. It’s filling, warm and satisfying. And I am always looking for healthier soups to make. Like this Loaded Baked Potato Pressure Cooker Soup we made last week:

I paired it with a salad and some super easy homemade chips. To make the chips all you have to do is take small tortillas, brush them with a light layer of melted butter, cut them in quarters and put them on a cookie sheet. Pop the cookie sheet in the oven and broil them for 3-4 minutes until they are brown. They are perfect to dip in this hearty soup.

One of the things I don’t think people realize about Pressure Cooker is that you can use them to saute things first in the same pot and then put the lid on and use them to pressure cook the items. It’s pretty cool.

Here is the recipe for Pressure Cooker Tex-Mex Soup. You can make this as a vegetarian soup as well. If you decide to do that, you can add a couple more cans of different kinds of beans to the soup. I used beef stew meat for our protein, but this would also be delicious with shredded chicken or beef as well.
