Hi Margaret! Yes this recipe makes enough for dinner. So for one person I would probably cut it in 1/4 or 1/2 and save leftovers.

Hi Maureen! Yes I think that would work. I have never tried it. And you might have to adjust the cooking time if rice pasta takes less time to prepare. But I would definitely try it!!

We are transitioning into a Keto diet so the pasta is out but my daughter also has issues with gluten. Do you think a rice pasta would work? Have you had any experience using a rice pasta? I’m looking into pasta substitutes to make it low carb or carb free but I have the rice pasta all ready on hand.
